What's the difference in Cinnamon's? Hot candy vs Cinnamon rolls?

Cinnamon has two flavors. How are they different besides burning the taste buds? Cinnamon Rolls, Oatmeal, and even cinnamon spice you sprinkle on toast is different than cinamon candy, like Red Hots, Firreballs, and Hot Tamales. Why is that? How can I make the hot kind of cinnamon?

Both have a cinnamon base, the hot ones are artificially flavored and are based upon the real cinnamon. The buns are based upon Cinnamon spice, like you find in your kitchen cupboard.
