Here's a good recipe with how to make it so that the top is white and the bottom is dark. The page has some history about it too:

"It is traditionally made in a small Coca-Cola glass. Pour 1/2 inch of cold milk in the glass. Spritz seltzer at full force into glass causing it to become white and bubbly with a good head of foam. (Bottled seltzer or club soda can be used but won't produce the foam you get with a soda siphon.) Fill to within 1 inch of the top of the glass. GENTLY pour 2 Tbsp of chocolate syrup (preferably Fox's U-Bet Syrup) slowly down the side. When the chocolate has settled in the bottom of the glass briskly stir with a long spoon, whisking ONLY at the bottom. This produces a brown drink with white foam. If you mix it too much the foam disappears. - From Epicurious.com."

This is the famous New York Egg Cream, preferably made with Fox's U-Bet Chocolate Syrup, but any quality chocolate syrup would work. Seltzer from a pasteurized cylinder is best and renders the most foam. When made correctly, this is a beautiful drink.

2 tablespoons Fox's U-Bet Chocolate Syrup (or any god quality chocolate syrup)
1/2 cup very cold whole milk
1 cup cold seltzer from a pasteurized cylinder
