I assume people would do so to specify that part of the corn, as opposed to the cob or husks. If you say just "corn," I think about a field of corn stalks or a serving of corn.

Corn refers to the entire cob and kernels. Each cob contains any kernels. once the kernels are of the cob, then they are corn kernels.

corn is the plant, and kernals are the individual peices. but you can call any of it corn, even one peice.
