Angel Hair Pasta with Shrimp and Spinach:
Serve with ripe tomatoes dressed with oil and vinegar. Substitute finely chopped red onion if you don't have shallots on hand.
8 ounces uncooked angel hair pasta
1 1/2 pounds peeled and deveined large shrimp
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1/4 cup finely chopped shallots
1/2 cup fat-free, less-sodium chicken broth
2 tablespoons lemon juice
6 cups coarsely chopped spinach
2 tablespoons capers
Cook pasta according to package directions, omitting salt and fat. Drain.
While pasta cooks, sprinkle shrimp with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add shallots; sauté 30 seconds. Add shrimp; sauté 3 minutes. Remove shrimp mixture from pan. Add chicken broth and lemon juice to pan, scraping pan to loosen browned bits. Add cooked pasta, shrimp, spinach, and capers, and heat 1 minute or until spinach wilts, stirring frequently.
Yield: 4 servings (serving size: 1 1/2 cups)

Recipe for grilled shrimp with a marinade of lemon juice green onions, parsley, garlic and oil.
INGREDIENTS:
2 pounds jumbo shrimp
1/4 cup vegetable oil
2 to 3 Tbsp fresh lemon juice
1 bunch green onions, with a few inches of green, thinly sliced
1/4 cup chopped parsley
3 cloves garlic, finely minced
1 teaspoon dried basil
1 teaspoon dry mustard
1 teaspoon salt
PREPARATION:
Place shrimp in a glass bowl. Stir remaining ingredients together; pour over shrimp. Cover and marinate for 3 to 4 hours. Grill over hot coals for about 5 to 7 minutes, turning halfway through the cooking time.
Serves 4 to 6.

Coconut Fried Shrimp
1/2 lb. unpeeled medium size shrimp (I use big ones)
3/4 cup pancake mix
3/4 cup beer
Vegetable oil
1/4 cup flour
1 cup flaked coconut
Peel, shrimp, leaving tails intact; devain if desired. Combine pancake mix and beer in a small bowl; stir until smooth.
Pour oil to a depth of 2 inches into a dutch oven; heat to 350 degrees. Dredge shrimp in flour; shake off excess. Dip shrimp into batter.; dredge in coconut. Fry, a few at a time, 45 seconds on each side or until golden. Drain on paper towels.
If using larger shrimp double or triple recipe.

this is my favorite way to eat shrimp, hope you try it and like it!!
4 servings
1lb peeled and deviened med to lg shrimp
1 sm sweet onion
3 plum tomatoes
1 sleeve ritz crackers
splash of white wine
juice of 1/2 lemon
1/2 teaspoon of garlic powder
salt and pepper to taste
1/2 stick of butter or margarine
preheat oven to 350
spray ceramic or glass round pan with non stick spray. place shrimp in an even layer on bottom of pan. thinly slice onion and tomatoes. layer onions first on top of shrimp, then tomatoes. splash with wine and lemon juice. sprinkle garlic powder, salt and pepper. crush crackers and spread evenly over the top to cover. put pats of butter evenly over crumbs. bake for 35 to 40 minutes until browned and bubbly.

shrimp scampi is good
saute garlic in butter then put the shrimp in it cook until pink then put on a bed of noodles
