I just did it when I made Emeril's Delmonico's Famous Eggplant casserole. It called for cooked small shrimp, cooked 45 minutes and all was just fine. Not chewy at all.

I suggest you make a topping. Casseroles respond very well to toppings. Pasta casserole with fresh shrimp crust. You can chop the shrimp, mix with a little breadcrumbs and butter or olive oil and maybe even a little parmesan cheese. For the last three minutes of cooking, evenly spread this mix over the top, turn on the broiler and cook until crisp and golden brown on top. It will heat the shrimp just enough and taste delicious.

fresh shrimp is always best, but this will work

It will work. It will be ok. Most food is ok.

Some food is really great.

For shrimp, get em fresh, whatever size. Then cook em in some olive oil and/or butter for just a minute or two, then add lemon and/or garlic. You could just make a bit of angel hair pasta and put them on that. Yum!!!!!!

Casserols are doomed from the start, stale old ingredients cooked till there is no flavor left in them. Ok food but not great.

I make a chessy rice shrimp casserole and always use cooked shrimp, it takes about 20 minutes too, and mine never come out chewy or overcooked. I think you'll be just fine with it. Let me know how it turns out.

shrimp cooks incredibly fast (3 minutes when you saute!), so it is very easy to overcook. I'd check online (Allrecipes.com or Food Network) and see if you can find a recipe involving shrimp in casserole, just to make sure. Don't want to waste any shellfish, that's for sure. Good luck.

If it is baked it shouldn't be a problem. I imagine.. I've never put shrimp in a casserole though.. but I imagine baked would be less chewy than fried or boiled.

it'll be too chewy, I think you should put raw shrimps into a pasta casserle, because shrimps cook easily.

Put everything else and leave the shrimp at last, 10 minutes bfr you actually turn it off, put the shrimp, if not they taste weird.

Since they are already cooked you should really add them in the last few minutes of cooking.

It will be stringy and chewy...add it the last 5-10 minutes.
