Avocado is a great addition. I like to julienne (cut into very thin strips) carrots (mainly for color) and cucumber. A great texture addition is a little tempura batter around the crab, or even the whole roll! Adds a great crunch, but a little more work. Your oriental mart should have a batter mix. Don't forget garnishes like sesame seeds and roe (if you can find it) for a nice presentation.

Cucumber, Carrots, Red Pepper, Asparagas and if you are not into raw fish, try smoked salmon, tuna the canned variety or cooked meats.

Just make sure to keep the ingredients simple, buy only good quality seaweed, and keep the rice warm. I used to make it alot when I was a chef, it is fun and can be a real starter at any party.

i used to use the normals like carrot and avocado, chicken or just have vegtarian ones. also fresh pink ginger and dykon( a yellow root used in japanese dishes) make sure you use good sushi rice and if you can find it put in the rice a little rice vinegar for a beautiful taste.
