Eggs are a high energy fare perfect for breakfast--to give us energy througout the day. Back when one's day consisted of lots of hard labor (farmwork).
Other cultures, such as many asian cultures, actually make eggs part of their meals throughout the day. A fried egg with rice was simple fare for lunch or dinner.

The rooster crows, the hens have laid, people are hungry, eggs are there, fresh, waiting, and easy to prepare in so many ways. It just makes sense! Also, before there was the fridge, you had to be concerned about keep-ability. They do need to be eaten soon, if you have no fridge. ( personally, I love to have my eggs in a dinner omlet!)

It was more about the fact that the eggs were freshest in the morning after the morning collection of them....before refrigeration came about.......otherwise they would spoil if kept too long......

the person who fancied eating them for breakfats .. you could have roast dinner for breakfast if you really wanted ! nothing is going to come into your house and say " Ohhhhh noooo you cant have that for breakfast ! " hahahaha !! you can eat what you want for breakfaat !

I think its just quick easy and inexpensive, thats all. You can have corned beef and swiss sandwiches if you prefer LOL.
