No bake chocolate drop cookies would be perfect for you (if you have all of the ingredients.)
Ingredients:
1 stick of margarine
1 cup of Sugar
1/3 cup of milk
2 Tablespoons Bakers Cocoa
1 cup Peanut Butter
1 teaspoon of Vanilla
1-1/2 cups of quick oats
Instructions:
In a large microwave-safe bowl melt Margarine. Stir in cocoa, sugar, and milk until blended well, Microwave on high for 2 minutes (mixture should boil). Remove from Microwave and stir in vanilla and peanut butter until blended. Stir in Oats. * Place by rounded tablespoons on waxed paper until set
Make about 16 cookies
*Since Microwave oven vary you may need to stir in an extra handful of oats if mixture seem to be too loose. Cookies set if mixture is thicker.

"This is a wonderful recipe when there are no eggs in the house and you have to make cookies. They are a very moist cookie and freeze well."
Original recipe yield: 8 -10 dozen.

2 cups white sugar
1 cup shortening
1 (15 ounce) can pumpkin puree
2 teaspoons vanilla extract
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
12 ounces semisweet chocolate chips

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C).
Cream the sugar, shortening, pumpkin and vanilla together. Mix until light and well combined.
Mix the flour, baking soda and ground cinnamon. Stir the flour mixture into the creamed mixture. Mix until combined. Stir in the chocolate chips.
Drop by teaspoons onto an ungreased baking sheet. Bake at 375 degrees F (190 degrees C) for 12 to 15 minutes or until set. Let cookies cool on a rack.

My Mom made what we called "haystacks". Melt a large milk chocolate Hershey Bar, add chow mien noodles, the hard crunchy kind, and drop on buttered waxed paper. This is like a cookie, but more of a candy. Your daughter will have fun getting all messy, and it is quick and easy, but also messy. Good Luck!

Go to allrecipes.com and search for egg-free cookies. They have lots of recipes.
BTW Applesauce is a substitute for oil or butter. I have never seen it as a substitute for eggs.

There are "cookies" you can make using peanut butter as the binding agent. Add oatmeal, raisins, chocolate chips and/ or nuts and roll in crushed graham crackers. You don't even need to bake them. Yummy

Eggs are a leavening agent. You can replace them with a teaspoon of baking powder or soda and a little bit of extra moisture (water, milk, whatever).

if you have some ritz cracker i seen these made at one of my daughters party...shes 35 now.....take 2 ritz crackers and spread peanut butter on them and make into a sandwich....now dip these in melted almond bark chocolate....as for cookies with no eggs that difficult...i sit and think...........

Change to: cookies US Metric
1/2 cup unsalted butter
1/4 cup granulated sugar
1 teaspoon vanilla
3/4 cup all-purpose flour, plus
3 tablespoons all-purpose flour
1/8 teaspoon baking powder
1/2 cup chunky chocolate pieces
1/4 cup pecan halves, salted,roasted
Preheat oven to 300F degrees.
Beat butter and sugar in bowl of heavy-duty electric mixer until light and creamy.
Beat in vanilla.
Add flour and baking powder; beat just until mixed.
Stir in chocolate pieces and pecans.
Dough will be firm.
Shape into 6 or 7 lemon-sized balls.
Arrange 3 inches apart on ungreased baking sheet.
Using palm of hand, flatten each cookie to 1/2-inch thickness.
Bake cookies until faintly browned at edges, about 45 minutes.
(The cookies are so big that they require a long baking time.) Remove from oven; let cool on wire rack.
20 min 10 min prep
Change to: dozen US Metric
1 cup shortening
1 cup creamy peanut butter
1 cup white sugar
1 cup packed brown sugar
1/2 cup buttermilk
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
Preheat oven to 375 degrees F (190 degrees C). Lightly grease cookie sheets.
Mix the shortening, peanut butter, white sugar, brown sugar and buttermilk until smooth and fully combined.
Add the flour, baking powder, baking soda and salt to the peanut butter mixture and mix until well blended.
Drop cookies 2 inches apart on lightly greased cookie sheet. Flatten with a fork that has been dipped in flour. Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes.
20 min 10 min prep
Change to: dozen US Metric
1 1/2 cups all-purpose flour
1 cup sugar, extra for sprinkling
1 teaspoon baking powder
1/2 teaspoon baking soda
2 tablespoons sour cream
1/2 cup butter
2 tablespoons milk
Preheat the oven to325°F.
Sift together the flour, sugar, baking powder and soda. Set aside. Cream together the sour cream, butter, milk and vanilla; mix well. Stir in the flour mixture.
Drop by teaspoonfuls onto greased cookie sheets, flatten with fork. Sprinkle with sugar. Bake in the preheated oven for 10-12 minutes, until firm and golden coloured. Cool for 2 minutes in the oven and remove to a wire rack to cool completely
