I forgot to ask in my steak recipe question yesterday..how do i get the steak to stay juicy and tender? i like my steak medium well to well done..

It all depends on the cut of the steak, how you prepare it, how you marinade it, and how long you cook it. Most steaks are best grilled. Here is a link that might help. Be prepared to spend a little more money in order to get the most tender steak.

Two things to remember.
1. Most people over cook steak which will always lead it to be more tough. It is important to remember that well done has NOTHING to do with the color of the meat. It is a temperature. A steak can be cooked to a well done temperature of 170 F and still be pink and juicy inside. If you sear the meat on the outside it will trap in all of the juices, they are pink, and cook it according to the recipe you chose from yesterday it should work out OK. I sear meat at the hottest temperature I can, 1000 degrees Fahrenheit if I can get it and finish it off around 400 to 500 degrees F. I would recommend you get a meet thermometer until you get a better feel for what that takes. For reference 140 is Rare, 155 - 160 is Medium, and 170 is Well Done. Do not exceed the 170 temperature because you will ruin all of your hard work.

2. If you start out with a tough piece of meat it is up to you to make it tender, and that means work. If you start out with a good piece of meat it then it is up to you to ruin it. New York or Kansas City Strips are the best. Rib Eye is also good. If you buy a Porter house (my favorite) which looks like a T-bone, one side is New York Strip and the other is Rib Eye. You will notice as you try different cuts of meat some will have a stronger beef flavor. I don't like sirloin much because it lacks flavor.

Now give it about 10 minutes to rest after you cook it and enjoy.

Season your steak at least 30 minutes before u cook it.Cook on a medium heat and when u pull your steak off the burner /grill let it stand for 5 minutes.It will be juicer that way.U can cover it to keep it warm.
