The chef at my restaurant says that fresh brewed coffee that sits in the pot starts to deteriorate in quality after sitting for only 15 minutes. Seems like a little too quick for me. What do you coffee experts thing of this chef's statement.

I think an hour in the pot is fine,but not much longer!

The chef is correct (after all, it is his field of expertise). The oils and acids in coffee start to go bad at about 15 min. and really get racid as the time approaches 30 min.

15 mins is a little too short. I would say about 45 mins then it starts getting cold and gets a tiny bit mushy. Cheers

15 minutes is a small amount of time but truthfully it should be made fresh every half hour
