You have some good suggestions, so I will just elaborate a bit on some of them.
With the Swedish meatballs make a sauce consisting of evaporated milk and Soya sauce, with some chopped dill and parsley, serve hot over buttered noodles or Tagliatelle.

Boboutie is worth the effort, and this recipe will serve one person, but can be doubled/trebled for larger numbers

4 oz minced beef
1 small chopped onion
1/2 small cooking apple chopped
1/2 oz butter
10 whole almonds roughly chopped
1/2 teaspoon curry powder
1/2 teaspoon brown sugar
1 dessertspoon lemon juice
1 large egg
60 ml. milk 1/2 oz bread without crust
salt and black pepper to taste.

Method
Heat butter add onion and apple cook gently to soften
stir in almonds, turn up heat and add minced beef, cook to colour evenly
Add curry powder, sugar, lemon juice and seasonings
Leave the mixture to cook a few minutes more
Add the egg to the milk in a basin and whisk together well
Pour half the egg mixture onto the bread and let it soak for 5 minutes, when soft beat it well and add to the meat mixture
Transfer the lot to a 1 pint ovenproof dish and pour the rest of the egg and milk mixture over the top.Bake in the oven at 150 degrees C. for 45 minutes.

Another quick and easy thing to do with mince which is a bit "different" is to saute it quickly in a hot wok, (or frying pan) with chopped spring onion and ginger, season it with soya sauce (and thicken it if you like with a bit of cornflour in water) and serve with noodles or rice.

If you add a teaspoonful of curry powder instead of the soya sauce you have an "instant" curry.

If you add Chili powder and tomato instead of the ginger and soya sauce you have a Chili con carne ready to serve with Avocado, Pitta or any other flat bread of your choice.

Add oregano and Tomato Puree, it's ready to go with Pasta.

Just make sure you start with a good quality minced beef,

The ultimate recipe must be for Steak Tartare :- Really good quality fillet steak, preferably hand chopped rather than minced, formed into a pate, chilled and served with a raw onion ring and the whole raw yolk of an egg - but you do really have to be sure of your ingredients for this one.

Enjoy your mince - I have enjoyed thinking about it

Spag bol is easy, fry some onion and mushrooms, then the mince, put it in a pan with a can of tomatoes and a dab of tomato puree and garlic. Add a bay leaf, a pinch of mixed herbs and some parsley and black pepper and simmer while the spaghetti cooks.
Or home made burgers. Put the mince, some minced onion, a dab of mustard, salt and pepper into a bowl and mush it all together with your hands. You get 8 burgers from a pound of mince, make into balls, flatten and grill under a medium heat for about 6 mins each side.

You must be from the UK, you guys don't have Hamburger Helper there, do you?! Too bad, it's these packets that have all the seasonings, and usually some pasta inside, and all you do is cook the ground beef (you call it mince) in a skillt, add the packet, and some water. Comes in all different flavors too...
Maybe you could get some North American friends to mailyou some, or order it off the internet!

If not, whip up some tacos, or burritos, or spaghetti, or lasagna, or chili, or meatballs, or burgers, or shepherd's pie, or meatloaf....

chilli, spag bol, burritos, home made burgers, ooo and i make a mean curried mince pilaff , yum - this serves one person - enjoy!!!!
( i never put in the mango chutney though ewww)

¼ small onion, or shallot, chopped
¼ small green pepper, chopped
1 garlic clove, crushed, or 1 teaspoon garlic puree
low fat spray oil
105g extra lean minced beef
2 teaspoons mild curry powder
75g basmati rice
300ml ( ½ pint) stock or water
2 teaspoons mango chutney
salt and freshly ground black pepper

Heat a heavy based frying pan until quite hot, then add the onion, green pepper, garlic, spray oil and 2 tablespoons of water. Stir, cover and cook gently for 5 mins until softened.
Uncover the frying pan and raise the heat. Stir in the mince, heating until brown and crumbly.
Stir in the curry powder and rice. Cook for 1 min and then mix in the stock, chutney and seasoning. Bring to the boil, cover and simmer gently for 10 mins.
Remove the frying pan from the heat and leave to stand, still covered, for another 5 mins. Then uncover, fluff with a fork and check seasoning

Cornish Pasties (serves 4)

6 oz short crust pastry
4 oz lean mince
2 potatoes peeled and grated
1 small onion grated
5ml (1 tsp) salt
beaten egg

Heat oven to 200c.

1. Mix meat, potatoes, onion and salt.

2. Divide pastry into 4 and roll out into rounds.

3. Place mix along centre of the rounds.

4. Dampen one half of the edge of the pastry round then fold upwards to meet together. Flute together with finger and thumb of one hand and finger of other hand.

5. Brush pasties with beaten egg and place on greased baking sheet in top of oven.

Bake for 10 minutes at 200c then a further 40 minutes at 180c till golden.

Cool on a rack.

I like them cold, or warmed with mash and Heinz beans.

OOOH Ooh ooh!! I've got a good one - home made burgers and hand cut chips. Put par-boiled potato slices on a baking tray at 200 degrees and turn regularly. Mix beef with an egg, onion and maybe breadcrumbs and grill or shallow fry. Serve with a crisp salad or on a lightly toasted bun. (Ooh that sounds like what they write at the end of a proper recipe...)
