i need somthing fairly easy. dont have alot of time on my hands.

Prep Time: 10 min
Total Time: 30 min
Makes: 6 servings, 1-1/4 cups each
Creamy Chicken Chipotle Stroganoff

1 Tbsp. oil
1 lb. boneless skinless chicken breasts, cut into strips
1 medium onion, cut into thin wedges
1-1/2 cups water
1 can (8 oz.) mushroom pieces and stems, undrained
2 chicken bouillon cubes
8 oz. medium egg noodles (4 cups), uncooked
1 Tbsp. finely chopped chipotle peppers in adobo sauce
1 container (8 oz.) BREAKSTONE'S or KNUDSEN Sour Cream



HEAT oil in large skillet on medium-high heat. Add chicken and onions; cook and stir 5 to 7 min. or until chicken is cooked through.
ADD water, mushrooms with their liquid, the bouillon cubes and noodles; mix well. Bring to boil. Reduce heat to medium-low; cover. Simmer 10 to 12 min. or until noodles are tender and only a small amount of liquid remains. Stir in peppers. Cook an additional 2 min., stirring occasionally. Remove from heat.
STIR in sour cream.

This is good...1 cut up chicken - 4 large potatoes peeled (if u want) and cut in medium pieces-4 carrots peeled and sliced (2 inch pieces)-1 onion peeled and quartered.-1 Cup chicken broth or 1 cup water with chicken base or bouillion added. Preheat oven to 350. Place everything, except liquid, in a 13x9 casserole dish, pan, or whatever. Season all with salt, pepper, and garlic powder. I also use lemon pepper and cut back on regular pepper. Lemon pepper goes along way so just use enough to cover all lightly. Pour about 2 Tablespoons of oil, I use olive, all over. Mix everything by hand to make sure all is covered with seasonings and oil. Pour liquid over top cover with a lid or foil.
Bake for 45 minutes and remove lid for last 15-20 minutes to brown.
This may seem time consuming but it's not. It will probably take 20 minute prep and the hour to cook. If you want to cut prep time buy pre washed and bagged veggies or go to the freezer aisle. l! I also add some of my fresh dried herbs to this, depends on my mood. Basil goes very well. Good luck and enjoy!

Chicken Alfredo would be fairly easy. Prep Time :approx 20 min

You will need:
Boneless chicken breast
Angel hair pasta
Alfredo sauce (From the grocery store in the sauce section)


Cut up boneless chicken breast into pieces the size of your choice.

Stir fry them until the juices run clear

Cook up angel hair pasta until it's eldante

Mix the cooked chicken and the Alfredo sauce together in a sauce pan and heat.

Spoon the mixture over a plate of pasta,season to your liking and enjoy.

I like to serve garlic bread with this

Easy Chicken Parmigan.. It is very tasty, fast and easy.

INGREDIENTS:
4 boneless chicken breasts, pounded to 1/2 inch thickness
1 egg
1/2 cup milk
seasoned bread crumbs
8 slices mozzarella cheese, or more
1 jar (16 oz) spaghetti sauce
Parmesan cheese

PREPARATION:
Whisk together the egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs. In a skillet with a little olive oil over medium-high heat, brown on both sides until golden. Set chicken in a baking dish.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly.

I just made this up last night... I took some Ice Glazed Chicken breasts, put them in a grill pan until they were cooked, boiled some pasta and added some frozen green beans for the last couple minutes of boiling, cut the chicken into cubes and put it all together in a bowl, mixed in some pre-made pesto and topped it with parmesan cheese. I left out the pesto for my daughter and just mixed a little bit of butter into hers and she said it was the best dinner I ever cooked. It was pretty good, very easy, and took about 1/2 an hour (cooking time for the frozen chicken).

this does take a bit, but its really good

couple cloves garlic
1 can condensed cream of chicken soup
1 can condensed cream of mushroom soup
hand ful of chopped onion
2 chicken breast
1 can italian bread crumbs
1 bag egg noodles
1 cup sour cream

preheat oven to 350

start by putting the chichen breasts in the bottom of a 13x9 baking dish space them about 1-2 inches apart. then put a dash of salt on each breast.
mince the garlic and onion and evenly distribute them on the chicken. now addthe soups (still condensed) pour them all over the breasts add the sour cream.now mix up the ingredients, using your hands is way easier but remember to wash first. now that they are both covered, sprinkle a thin layer of bread crumbs all over them.
place them in the oven for about 30 minutewhen about twenty minutes have passed, check the chicken to see if its ready. it should be boiling. now time to prepare the egg noodles just pre pare them like you normally would. when the chicken and noodles are done, serve the chicken on top of the egg noodles.

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over rice, pasta or mashed potatoes.

Chicken Parmesan (I like to serve this with mixed veggies)
Serves 6

1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped

Instructions:
Preheat the oven to 350ºF

In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.

Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo (I've served this without the paste and it was delicious!)
Serves 6

6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated

Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.

In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.

In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.

Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Preheat oven to 375.
Rub olive oil, rosemary, salt into chicken and potatoes. Roast for about 1 hour.
Serve with a side of salad.

Bisquick. Make the Bisquick dumplings with your chicken.
Pretty quick and tasty. Kids love it too.
