Eggplants love tomatoes, peppers and zucchini, and are good partners for lamb and beef. They marry well with garlic, and have no objection to oil which they soak up with delight.

Originally from India, the eggplant, under Arab influence, came to be grown in Africa and Europe and appeared on the French royal table in the 17th century, through it was not until the 19th century that it actually became part of everyday cooking.

Its flesh is soft and sweet and the bitterness comes only from the skin.

would u like a chinese style of cooking eggplant?
Here i have two!
The first dish is try to steam it. Cut the eggplant into a small bar, then put some small garlic pieces (if possible put garlic into a stiring machine to make it into really SMALL pieces) into the eggplant. Just steam it until it's ready to it. Lastly, pour out the water that comes out from the eggplant and put some soy sauce into the eggplant. FINISH!
The other one is to fry it. Cut the eggplant into lamellar piece. Not too thin probally not thinner more than 1cm and not thicker than 2cm as its thick. Put some fleash of fish on top of the eggplant piece. Fry it until it's ready to eat. This method is just like the Hong Kong style snack food.

Here is my favorite. Cut the eggplant in half lenghtwise and scoop out part of the eggplant inside to make a large hollow.Chop up what you have scooped out. Mix up your favorite meatloaf mix and add the chopped up eggplant into the mix and then stuff both eggplant sides and bake like a regular meatloaf. This makes for a very tasty meat and veggie combination. You can also smother the eggplant in your favorite spaghetti sauce for additional flavor and color.

Here is a very easy recipe for you.

Cut Eggplant into strips. In a bowl add 3 cups of flour and any spices you like. I use either Garlic powder or even some of Emmerils spices like. Southwest or Cajun spice mixes. Add the spices to your taste. usually about a handful will do. .
Mix the flour and the spice together in the bowl and then dust the eggplant strips with the mixture.
You can either freeze them for later or use them now.
Just fry them up in some oil and sever with either a tomato sauce , Vidalia onion sauce or ranch dressing.

Here are two great recipes for eggplant:
1. cut egg plant into french fry sized pieces
2. put flour in a zip lock bag and place the egg plant in it to coat them with the flour
3. beat 4-6 eggs in a bowl
4. dip the flour cover eggplants in the egg
5. in another zip lock bag, put bread crumbs or cracker crumbs in it
6. dip the eggplants in the bread or cracker crumbs
7. Deep fry the eggplants until they are golden brown, or they float.
They make the best fries that I have ever tasted!
Second recipe:Eggplant Parmasean
1. Cut eggplants into small round pieces
2. place a small amount of tomato sauce in the bottom of a cake pan
3. sprinkle parmasean and mozzarella cheese ontop of the sauce
4.add a layer of eggplant
5.add another layer of tomato sauce and cheese
6.add another layer of eggplant
7.add final layer of sauce and cheese
8. Bake at 350 for 20-35 minutes or until the cheese ontop is golden brown.

Simplest could be eggplant omelet. Boil or grill eggplant (if grilled, remove skin) then press flat and wide on a plate using fork. Prepare beaten eagg, season with some salt, pepper, pinch of sugar & garlic salt if desired. Dip the eggplant oin the beaten egg and then fry til golden brown or egg is cooked. For sauce, you may use soy sauce with lemon or catsup. You may also try worcestershire sauce.

You may also just cut and fry til cooked and prepare desied dip or sauce. You may opt for Mayo garlic dip.

You can also cook with tomato sauce just cut into small pieces, sautee with tomato sauce or special eggplant sauce and season with chili sauce, garlic salt and pinch of sugar.

You can also bake it. Cut crosswise and slit through the middle, stuff with grated cheese, pepper, tomato sauce and set to oven for baking.

I usually peel it then slice it into rounds and put it in a frying pan with butter, chopped onion, and mushroom. Flip the eggplant over a few times to cook both sides until soft and top with Mozzarella cheese. :) MMM

split the eggplant in half lengthways, cover both sides with plenty of butter and sprinkle Emerills new garlic parmesan cheese spice over both sides,place on a baking pan abd roast in the oven 350 until fork tender. DELICIOUS!

do a google search you will find so many different ways to make some awesome dishes with eggplant mine is eggplant lasagna....instead of noodle you use lightly breaded fried egg plant slices.....

its really good if you cut it in half, scoop out most of the insides leaving some flesh. Cut into strips, dip these strips in seasoned bread crumbs and fry till golden. Or you can scoop out the inside and stuff with a meat sauce mix and bake in the oven for about 1 hour at 375 degrees
