take one pound of ground meat (you can use turkey, chicken, or beef). Add about 1/4 cup of finely diced onion and green pepper and two heaping tbs garlic. Also add one cup of seasoned bread crumbs, two tbs. of your favorite bbq sauce, a couple tsp worchestershire and shredded cheese if you wish. Mix well and put into an oiled oven proof pan. Top this with mashed potatoes or tomato sauce if desired. Cook at 350 degrees for about 45 minutes.

ITALIAN MEATLOAF

2 lbs. ground beef (I use 1 lb beef, 1/2 lb veal, and 1/2 lb ground pork in ours)
2 c. soft bread crumbs (or use oatmeal)
1/2 c. chopped onion
1/2 c. finely chopped celery
1/4 c. grated Parmesan cheese
2 eggs, slightly beaten
1 tsp. salt
1/4 tsp. pepper
A bit of Tabasco or A-1, if desired. Play with the mixture until you get the flavour that you like!
Mix above ingredients lightly.

SAUCE:

1 (8 oz.) can tomato sauce
1/2 tsp. oregano

Flatten meatloaf and place in 13 x 9 inch dish or shape into a loaf. Mix tomato sauce and oregano. Pour on top of meatloaf. Bake at 350 degrees for 30 minutes. Take meatloaf out of oven and pour off drippings. Put Mozzarella cheese on top and bake for another 30 minutes.

Meatloaf
1-2 lbs hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato paste plus 1 1/2 cans water, mixed

Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute

In bowl, combine beef, onion, garlic, eggs, and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Pour water and tomato paste mixture over and bake for 30 minutes at 350. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.

1 pound, or so of ground beef (lean is ok, but not extra lean...it needs a little fat).

1 Egg.

1/2, or so of quick oats.

1/2 medium yellow/white onion, diced.

1/2 medium green bell pepper, diced.

3 stalks of celery, diced.

Couple squirts of ketchup.

Couple squirts of yellow mustard.

A tablespoon, or so of steak seasoning (Black Pepper, Salt, and other spices).

A few cloves of minced garlic or garlic powder.

A little soy sauce and/or extra salt (to suit your taste for saltiness).

Throw all of the above mentioned in a large bowl. Wash your hands and take off any rings. Use your fingers to mix and combine all of the ingredients. Form a football shaped loaf. Put it in a shallow baking dish and cook at about 375 for 40 minutes, or so.

During the last 10-15 minutes of cooking, I like to glaze my meat loaf with a %50 ketchup %50 yellow mustard mixture.

Meatloaf Patties, Smashed Potatoes, and Pan Gravy
Prep Time: 10 minutes
Cook Time: 25 minutes
Yield: 4 servings

1 1/3 pounds ground beef (Or Turkey)
1 slice white bread, spread with softened butter, then cut into small cubes
1/8 cup (a splash) milk
1 egg
2 teaspoons grill seasoning blend, or coarse salt and black pepper combined
1/2 teaspoon ground allspice (optional)
1 rounded tablespoon tomato paste
1 medium onion, finely chopped, reserve 1/4 amount
2 pounds small red potatoes (or white)
2 tablespoons butter
2 tablespoons sour cream
2 scallions, chopped, whites and greens
1/2 cup milk
3-Condiment Pan Gravy:
2 tablespoons butter
1/4 medium onion, finely chopped, reserved from meatloaf mixture
2 tablespoons (a handful) all-purpose flour
1 to 1 1/2 cups beef stock
1 tablespoon ketchup
1 rounded teaspoon spicy brown mustard
1 tablespoon steak sauce

Place meat in a large mixing bowl and create a well in the center of the meat. Fill the well with the bread cubes and dampen them with a splash of milk. Pour 1 beaten egg over bread and add seasoning or salt and pepper, allspice, tomato paste and onion to the bowl.
Combine the meat, bread and grill seasoning or salt and pepper and form mixture into 4 large oval patties 3/4-inch thick. Pan fry meatloaf patties in a nonstick skillet over medium high heat 7 minutes on each side under a loose tin foil tent. The tent will reflect heat and allow the steam to escape the pan.
Cover the quartered, red-skinned potatoes in water in a medium saucepan. Bring water to a boil and cook potatoes 10 minutes or until fork tender. Turn heat under pan off; drain potatoes and return to hot pan and warm stovetop to dry potatoes out. Add butter, sour cream, scallions, and milk to potatoes and smash to your desired consistency. Season potatoes with salt, to taste.
Remove meat loaf patties to a platter and return pan to heat. Reduce heat to medium and add butter and onion to your skillet. Cook the onion 2 minutes and sprinkle pan with flour. Cook flour 1 minute and whisk in 1 cup beef stock. Bring broth to a bubble. If gravy is too thick, thin with additional stock. Stir in condiments and remove gravy from heat.
Slice meatloaf patties and drizzle with gravy. Pile smashed potatoes along side and make a well in the center for sour cream or gravy. Serve meatloaf and smashed potatoes with baby carrots, or with a tossed salad dressed with oil and vinegar.

It's really just whatever you have in the fridge put into hamburger. It still tastes pretty dammn good.

I usually use:
Hamburger
bread torn into small pieces
onion
egg or olive oil (depending on which I have, they do the same thing)
ketchup
mustard
BBQ sauce
salt and pepper
garlic
oregano
and after that I get creative.
