I sometimes make stovies i.e Cut potatoes, Turnip, Onion, Carrots, Link Sausages with a pinch of salt and pepper to taste. Put in a large pot and bring to boil then simmer for 30 mins.

I would like recipes which are easy like this one. Thanks to all who reply.

I live in Scotland and I'm willing to try something from abroad.

Mud and Worms

Dry fry a tray of cheap supermarket mince, pour off excess fat.
Crumble over 2 to 3 oxo cubes and stir
Add boiling water and cover. Stir occasionally until almost cooked, topping up the water as needed.
Add in a pack or three of "Straight to Wok" noodles, stir heat through and serve.
You can add flour to thicken the mud but my children prefer it without.

Here's one of my favorites!
Chicken Burritos - You need some cooked chicken (you can either cook this fresh or use leftovers, doesn't really matter whether it's been baked, grilled, fried, or boiled - you just want the meat, not the skin). Dice or shred the chicken, whichever is easiest, in a large mixing bowl, to the chicken add sour cream, powdered Ranch dressing mix and whatever shredded cheese you have on hand ( I like to use either cheddar or colby-jack), mix all this together and spoon into flour tortilla shells, roll up and place in recatangular or square baking dish. Cover with tin foil and bake at 375 for about 25-30 minutes. Remove foil, top with more cheese and return to oven for about 5 more minutes until cheese melts ( I usually just turn the oven off at this point and the residual heat will melt the cheese & that way if I forget them they won't burn). I rarely measure anything when I cook and the amount of chicken I have on hand usually varies each time I make this, but here are some general amounts and you can multiply or divide accordingly: for each 2 cups of shredded/diced chicken, use 8 oz. of sour cream and 1/3 cup or 1 packet of Ranch mix & about 1/2 pound shredded cheese (in the mixture), then add as much cheese as you want on top. You can vary this recipe by adding some sauteed onions, chopped bell pepper, diced tomatoes, a little salsa and/or (my favorite) sliced black olives to the mixture.

Another one - we had this last night:
Chicken Cacciatore - salt and pepper some chicken pieces and then brown in a little olive oil in a large, hot skillet. Chicken doesn't have to be cooked through at this point, just browned all the way around. Then add some sliced/chopped onion, bell pepper and minced/crushed garlic (if you don't have fresh garlic, wait and add garlic powder when you add tomatoes) and sautee' a little (if your pan isn't big enough, you can remove the chicken to a plate while sautee'ing the onions and peppers). Then add 1 large 28oz can of stewed tomatoes (you can use a smaller can if you're only cooking a couple pieces of chicken), some oregano, basil and a little more salt & pepper to taste. Cook covered on a low simmer for about 30-45 minutes and serve with cooked rice. This works well for a crock pot meal too, just brown the chicken first. Cook some rice when you get home and VOILA' - dinner is served!

Easier that stovies - I'm Scottish too and love them but it doesn't get any easier than this -

Get a square of tinfoil and place any combination of chicken/fish in the middle with a little veg and seasoning, bake for 30-45 mins in a moderate oven, serve with rice, potatoes or pasta. Just break the parcel open and enjoy the tender - never overcooked meat/fish and tasty sauce. Give everyone there own parcel - looks great if you have people to dinner and can all be in the fridge prepared and thrown in the oven at the last moment, and cooked while you enjoy an aperatif with everyone else.

e.g.
Chicken or Fish-
couple cherry or chopped tomatoes, pinch of herbs, some chopped peppers
or
Pinch of Chinese 5 Spice, sliced spring onion and shake of soy sauce
or
Big dollop of ready make pasta or curry sauce
or
Crushed garlic, sliced mushrooms and drizzle of olive oil
or
especially good with fish, lemon juice, sliced fennel, a pinch of dill

Just really whatever you have in the cupboard or fridge - slice any veg nice and thin so it cooks.

A good starter or accompanyment that can be cooked at the same time, slice open a whole pepper for each person, spread minced garlic around the inside of each half, fill the "cups" with halved cherry tomatoes, drizzel with olive oil and bake for 30-45 mins. If liked you can top with either anchovies or parmesan about 5 mins before the end of cooking, whatever your preferance, the taste is just wonderful, eat with big wedges of crusty bread to mop up all the yummy juices..

You could try a stovie with the following i.e. Cut potatoes, Sliced Sausages, Onions and a tin of Baked Beans and simmer for 30 mins.

You could try Potato Pie. Shortcrust Pastry (either bought or made) with a filling of Boiled, sliced potatoes and pot of double cream and seasoning. Bake in oven for 30 mins at 200.

Irish Stew





8 young lamb chops, thawed
salt and pepper
1 tablespoon olive oil
fresh sprigs parsley
fresh sprigs thyme
fresh sprigs rosemary
2 bay leaves
6 peppercorns
4 potatoes, quartered
4 carrots, sliced into 8 ths
2 cups cabbage, finely shredded
2 large onions, chopped
2 leeks, the white end washed good to remove sand thinly sliced
2 stalks celery, diced
1 1/2 cups frozen peas
chopped fresh flat leaf parsley


Season chops with salt and pepper.
Heat oil in saucepan and brown on both sides.
Spoon off any melted fat and add enough water to cover chops.
Bring to a boil and add parsley, bay leaf, peppercorns, thyme and rosemary enclosed in cheesecloth.
Lower heat and simmer.
Adding potatoes, carrots, cabbage, onions, leeks, and celery to chops and liquid.
Simmer 20 minutes then add peas.
Add a little more water if needed during cooking.
Simmer 10 minutes more or until potatoes are tender.
Adjust seasoning.
Garnish with parsley and serve.

Tator Tot Casserole
Brown Ground beef or Sausage drain oil
Put in a baking dish add a large can of Cream of Mushroom soup mix together..Then add the Tator Tots putting them evenly across the top in a layer then put cheese all over the top of that and bake for about 15 or 30 minutes till Tots are done and cheese it melted..The more times you make this the faster is gets.And the kids just love it.. And for a cheesier taste I put cheese under the Tator Tots also.. Hope you enjoy...

Pasta with sausage!! This is like, the best meal that I just randomly decided to throw together one day.

Pork sausages
Pasta
Pasta sauce
Cheese (mozzarella)

Cook some pasta and grill/fry some sausages. Get yourself a pasta sauce, anything you like really, that's tomato based (The best one I've found is Dolmio creamy tomato pasta bake- mmm!)

Mix the pasta and sauce together, slice up the sausages into chunks, mix those in as well. Put everything in a ovenproof dish, and then cut up some mozzarella cheese and place it on top (or use other cheese, cheddar works too)

Grill until the cheese has gone all melty and bubbly.

Tastes so good!

Corned beef hash
Potatoes, onion, carrots and tinned corned beef
and 1 beef oxo cube
Cut potatoes carrots and onions up add soil and pepper to taste and bring to boil then simmer for 1/2 hour add corned beef and oxo simmer extra 10 mins
Broth
Any veggies you have in fridge boil up with any leftover meat or minced beef/lamb, salt and pepper when cooked make dumplings (you can buy mix) cook til dumplins are cooked.
I bought a slow cooker (electric) for £10 you can cook cheap meats (shin beef) braising steak etc., vegies curries in it also comes with a menu book. You throw meats n veggies, curry mixes or whatever you fancy put it on in a morning and it cooks all day (its cheap way of cooking. Above meals can all be cooked in a slow cooker just use your imagination, easy washing up as well

Chicken Mushroom Rice:

Chicken pieces
Rice
Can(s) of Cream of Mushroom Soup
Water

Pour rice into a baking dish or electric fry pan until bottom of dish is covered with a layer. Place the chicken pieces on top, then dollop spoonfuls of cream of mushroom soup all around. If desired, add a can of green beans at this point too. Cover with water and bake for approximately an hour, checking occasionally to add more water if necessary.
