If your refering to the Chinese Rice porridge, "Congee"
it is mainly a rice soup served with meat, fish or vegetables, and in essence just rice cooked in broth and seasoned with sesame oil, soya sauce, garlic and ginger.
They generally grind the rice, you can do the same, just add 2 to 3 cups to a food processor and pulse 10-15 times, use chinese or indian basmati as they have the nicest flavour.
You can add green onions at serving time, BBQ Pork,
Duck, Chinese Sausage or steamed veg like Bok Choy, Chinese Cabbage. If you have oriental market, try to get acruller, it looks like a long doughnut stick, sliced and garnish the congee with it green onions and a dash of sesame oil.
