Serves: 6 Printer Friendly Version
Ingredients
3 cups ground graham crackers
1-1/2 sticks of butter
1-1/2 cups whipping cream
3/4 cup chocolate sauce
2/3 cup egg whites
1 cup sugar, plus more for sprinkling
Caramel sauce
Method
Preheat oven to 375 degrees F.
Place ground crackers in a medium bowl and stir in melted butter. Mix thoroughly, divide mixture into tart shells, press into the bottom, going about three-forth way up the sides.
Bake for 5-8 minutes then set aside to cool. Increase oven temperature to four hundred. In a large chilled mixing bowl, beat cream until soft peaks form. Add chocolate sauce and beat until whipped. Fill cooled tart shells with mousse and refrigerate while you beat the egg whites. Clean mixing bowl and beat the egg whites at medium speed until soft peaks form. Add the sugar, a little at a time, and continue beating until the meringue is shiny, thick and stiff. Spread meringue on tart shells. Sprinkle each with sugar. Bake for about five minutes until tops are golden.

If you want an easy peezy version of this then this is it.
Buy ready prepared shortcrust pasty cups (any supermarket), you could ever use nice shortbread biscuits).
Put 2 tins of condensed milk in a pan and cover with water, boil them for 2 hours unopened, do not allow the water to boil dry, so best to leave the pot uncovered and set yourself a little reminder to check, otherwise the tins will explode! This turns the condensed milk into caramel.
When completely cool open one of the cans and spread the yummy caramed over your biscuits or fill your cases.
Cover these with either chocolate sprinkles or good quality melted chocolate, allow to set and eat.
The second tin can be stored in the fridge until you need it - if you don't eat it straight away (I dare you not to eat it)!
For a rather more time consuming version "Jamies Dinners" by Jamie Oliver has a lovely version with caramalised apples on top, worth the effort but takes blooming hours and hours to make.
