I have always used butter instead of lard or other grease products! It tastes better and it's healthier. I am not a big sausage lover, so butter is just better. :) Of course, it's still just as fattening. LOL!

i use it to make cream gravy and sauces...but for brown gravy i would not prefer to use it as it burns instead of browning my roux.......
