Originally, it was on paper. (Which eventually rots and is destroyed.)
They did not want to destroy the name "God" so they replaced it with "G-d" - after all, God is very holy, and that way documents could decay and be torn without defacing God. (defacing as in vandalising)
I can barely believe the crud people are posting as 'answers' though. I don't think misspellings are systematic!

I have never seen it spelt that way. The only way to spell it is God. Any other way is simply insulting.
