saute onion and green peppers with tomatoes add jack mack and season to taste. serve with rice or boiled potatoes.

My favorite way to prepare mackerel is to broil the whole fish - back side down - with the belly cavity stuffed with chopped tomato, onion, and basil and or oregano and garlic. Drizzle a bit of olive oil over the "stuffing" before broiling. Adjust the oven rack so the fish is about 4-6 inches below the broiler and cook for 12-16 minutes depending on the size and thickness of the fish. For the last minute or two I like to sprinkle the top with some parmesan or asiago cheese. Mackerel tends to be an oily fish and the acidity of the tomato seems to cut that quite nicely.

If it's canned Jack Mackerel, it can be used much like tuna fish. Drain it and mix it with a dressing of your choice. Add in pickle relish, onions, etc. Substitute it for tuna in any cooked recipe calling for similiar canned fish. Or simply chill, drain and eat it plain. Your tastes will tell you what you like!
