This is something only Europeans notice. Americans are very careless with their silverware. Don't worry - no one usually notices whether or not you choose to change hands - it you eat with ease & comfort, others around you will be at ease and comfortable!

No, it's not immature or frowned upon. Not even in Europe like some people will try to tell you. A lot of Europeans don't need to switch hands, but it's not frowned upon if you do. I think Americans generally switch hands after cutting their food.
In Europe it's considered good etiquette to cut the food as you eat it. Cutting it all at once isn't very good etiquette, kids do that here but not adults.
So I'd say there's nothing wrong with switching hands. Few people even notice it anyway, they're all busy minding their own hands.

I sure do hope not, I do it. I've never thought about it, but I do switch hands and then put the knife at the top of my plate in between cutting my meat. What in the world made you ask if that was immature? Certainly not, I'm very mature for 41. Ha Ha

Different rules apply depending on country. In europe, the fork remains the instrument of choice for the left hand throughout the meal, until pudding (desert in American parlance), the fork may occasionally find its way into the right hand. This is rare, however.
In the US, it is considered perfectly acceptable to swap hands.

If you are left-handed, do everything in the reverse. No need to switch. Nobody cares anyways, they are too busy eating to look at you.

The proper way is just as you said. What is even more proper is to not cut all your food at one time. You cut a few bites, eat and cut a few more.
