Chilli Chicken

Ingredients:
Chicken whole (cleaned and cut into pieces) 1 Kg
Green chilli 10
Red chilli powder 1/2 tsp
White pepper powder 1/4 tsp
Black pepper powder 1/4 tsp
Yogurt (curd) 1/2 cup
Turmeric Powder 1/4 tsp.
Soya sauce 2 tbsp.
Cornflour 2 tbsp
Ginger 1/2 inch
Garlic 4 cloves
Onion 1
Tomato 1
Salt to taste
Vegetable oil as required
Green chilli and green coriander leaves for decoration

Method:
1.Cut onion, tomato into small pieces. Add ginger, garlic and make paste.
2. Cut thin slices of green chilli.
3.Mix red chilli powder, salt, turmeric powder, yogurt, 1 tbsp. soya sauce, 1 tbsp cornflour and 2 tbsp oil. Marinate the chicken with this mixture for half an hour.
4.Then apply onion-tomato paste to the chicken and again marinate for half an hour.
5. Heat oil in a pan. Add green chillis, white pepper powder and black pepper powder and fry for 30 secs.
6. Add chicken marinade and fry until half cooked. Stir ocassionally.
7.Mix rest of the cornflour and soya sauce in water and add to the chicken. Add little water (about 2-3 cups) to make thick gravy and bring it to boil.
8.Cover and cook for 8-10 mins on low flame. keep a constant watch.

Garnish with green chilli on the sides and sprinkle chopped green coriander all over the chicken. Serve hot.

Chilly Chicken

Ingredients

Chicken with bones 1/2 kg.
Hot Green Chilies cut length wise 15nos.
Capsicum cut length wise 1 nos.
Onions 1 big.
Soya sauce 4tsp.
Ajinomoto 1/2 tsp.
Red chillie powder 1/2 tsp.
Salt according to taste.
Oil 1/4 of a cup.
Turmeric a pinch.
Ginger Garlic paste 1/2 tsp.

Method:


Cut the chicken into pieces wash them and pat dry with a tissue paper and keep it aside (it is important that the chicken pieces are dry)
Heat the oil in an iron bandi then add the onions first and fry them for about 5 min then add half of the greenchilles and half of the capsicum and let fry for another 5 min.
Then add the ginger garlic paste and stir for 10 sec .Now add the chicken pieces and continuously stir for 20 min .
When the chicken is half cooked add the Soya sauce,ajinamoto,turmeric, red chillie powder, at this point u might get some water accumulating in the bandi make sure that u completely fry the chicken till they is no water it is important to stir it continuosly and cook till the chicken it completely done.
Just before the chicken is ready to be taken aside from the heat add the remaining green chilies and capsicum stir it again for another 10 min.Serve Hot

Here is another way:
4 tablespoons vegetable oil or peanut oil
2 medium Spanish onions, finely chopped
4 boneless chicken breasts, cut into bite-sized chunks
2 green chilies, finely chopped
1 teaspoon white pepper
spring onions, shredded, to serve (optional)

for the MARINADE
2 tablespoons dark soy sauce
1 teaspoon hot chili powder
1 teaspoon salt
2 tablespoons cornflour
1 inch gingerroot, peeled and finely grated (2-3cm)
4 garlic cloves, finely chopped
2 tablespoons malt vinegar
2 tablespoons tomato puree
2 teaspoons demerara sugar

MARINADE:.
Note: You'll need to marinate the chicken for at least 30 minutes. Marinating it for longer (up to 24 hours) will increase its flavour.
Mix all the marinade ingredients together and set aside. Heat 1 tbsp oil in a heavy-based pan and fry the onion over a medium heat for 5 mins until softened, but not coloured. Remove from the heat, cool and combine with the marinade in a large bowl. Add the chicken and stir to coat. Cover and marinate in the fridge for at least 30 minutes.
Heat the remaining oil in the pan. Tip in the chillies and white pepper, and fry over a low heat for 1 minute Add the chicken pieces along with the marinade, then fry for 10 minutes until the chicken is cooked. Top with the spring onions and serve.
