what's the best way to start using it again without having to taste old water and rubber?

Boiling hot water with a capful of bleach should do it. Do that a couple times and then flush it, making sure you get the drinking tube clean. Pull the mouthpiece off and make extra sure it's clean. Rinse it out (that Listerine thing is a good idea--it'll kill the bleach flavor too) and you're good to go! Or you could spend a few bucks for a new bladder. ;-)

If you didn't clean it and store it properly, you probably want to replace it.
You could try a mild solution of dish soap and warm water, soak for 10 minutes and then rinse really well.... but if it has any odor other than plastic afterwards, you need to replace it.
In the future, clean it out after each use and store it in the freezer between uses.

Camelbak sells cleaning tablets and brushes (for the tube)for cleaning their hydration systems.
After cleaning, fill with water and 1 teaspoon of bleach.Have replacement valves available also.Since they get damaged or worn out.
