Chicken Salad with Rice, Pecans, Grapes, and Orange Dressing
Ingredients:
• 4 (4 oz.) skinless, boneless chicken breasts
• 3 1/2 cups cooked wild rice (about 1 cup uncooked)
• 1 cup sliced green onions
• 1 cup seedless green grapes, halved (optional)
• 1/4 cup chopped pecans, toasted (optional)
• 1 tablespoon grated orange rind
• 1 cup SMUCKER'S Sugar Free Orange Marmalade
• 1/3 cup raspberry vinegar
• 1/4 teaspoon salt
• 1/8 teaspoon pepper
• Crisco Cooking Spray
Directions Spray a large skillet with Crisco cooking spray; heat over medium heat until hot. Add chicken; cook 2 minutes on each side or until lightly browned.Place chicken in an 11x7-inch baking dish coated with cooking spray. Bake at 450 degrees for 20 minutes or until cooked through. Remove chicken; cool and cut into ¼-inch strips.In a large bowl, combine chicken, rice, green onions, and grapes and pecans, if desired. Toss well and set aside. In a small bowl, combine the orange rind and next 4 ingredients; stir well. Pour over chicken mixture; toss well.

and yes, I realize you can just leave the rice, grapes and etc out... but just wondering what ideas you would have for conversion.. TY :)

How about bean sprouts instead of rice and for grapes us grape tomatoes.. that sounds good eh?

You don't need to leave out the rice...it all depends on how many people you plan on serving with this meal. Here's the nutritional breakdown for instant white rice...you can go from there.

If you eat the recipe the way it is made, and you want low carb, you would either limit the amount of rice or cut the rice out completely. Just the rice alone, for 6 servings, is only 12gm per serving!

instead of rice put green beans or asparagus. And instead of grapes put Orange slices

if you eat a type of beans with it --it will convert the rice to protein in the combo
