Cooks and cheese connoiseurs, I need your help. Can you eat Brie's skin? I ate it before and it doesn't taste as good as the cheese. I am trying to make Brie en croute. Should I remove the skin first?

The rind (or skin) is completely edible.
If you are cooking it en croute, by all means leave the rind on. Otherwise it will turn to liquid and run out of your shell.

I love the skin, but then again, I never met a cheese that I didn't like. I eat both parts at the same time.

And if you make Brie en croute without the skin, you will end up with Brie soup en croute.

Yes. That's actually part of what makes Brie so special. For your recipe, you can do either. But if you do want to remove the rind, then make sure you chill your brie wheel before you start cutting away at it. And you have to make sure your pastry dough is secure so that the cheese doesn't leak out of it.

Yes the outer portion of Brie is made to be eaten. If you want to make brie en croute and you try to remove the outer skin you will have a big mess.

you can eat the skin, it's an old wives tale, that you can't, but for your brie en croute you should use only the inside cheese.

You can eat it. Some people like it, some don't. It is just a matter of preference.

the rind is where most of the flavor of brie comes from. dont remove it.
