some perogie lovers mentioned Kolaches!
I never heard of Kolaches before what are
they? Are they anything Like Perogies?
Cause I don't know what Kolaches are
I'll make a few comments about Perogies
but please explain to me what Kolaches are!
I'm Ukrainian and Peduha is the Ukrainian
word for Perogies. The Saurkeraut ones
are my favourites. Next are the Potato
with cottage cheese. They both are
great boiled and served with butter.
Some like sour cream with them that
is good but sour cream hides some
of the perogie taste. I don't care much
for the meat ones which are plentiful in
the freezers of Askews, IGA,Safeways
& Overwaitea.. they are easier to get
than the Saukeraut ones. so I make them
often instead. For perogie recipe email
me at ddherbals@yahoo.ca
I called perogies Peduha until my
mid 30's when someone told me
Perogies and Peduha are the same
thing! The fruit ones are not so
great but are okay!

It's not Polish, it's Czech!

A kolache is a wonderful pastry made by those who are of Czech ancestry.

The following are descriptions of kolache from books about the Czech Texans:

"The Czech people are famous for their pastries, one of which is the kolache...The fillings--poppyseed, pineapple, apricot, cottage cheese and prune are prepared before baking. No one uses a recipe. Kolaches are made from a formula handed down from generation to generation in Czech families."

(The Texians and the Texans: The Texas Czechs, University of Texas, Institute of Texas Cultures at San Antonio, page 31);

And,

"Today, the only Czech word that many Texans know is koláč --the term for the famous circular tart made of double-risen dough whose center is topped or filled with a sweet sauce made of "mák" (poppyseed), cottage cheese, prunes, peaches, or other fruit filling."

(Krásná Amerika: A Study of the Texas Czechs, 1851--1939, by Clinton Machann and James W. Mendl and published by Eakin Press, Austin, Texas; 1983.)

They are popular in the Houston, TX, area... they are small rounds of dough (either yeasty and dense like bread, or light and flaky like biscuits) inside of which is rolled a filling of some sort. Usually link sausage, but can be cheese, fruit, chorizo, egg/cheese, potato, etc. Popular for breakfast, they are about they fit easily into your hand. Think pig in a blanket, but assorted fillings, and usually closed-in on each end.
