Does anyone know why when you look at foods with lower fat content the Carb content is always higher than the regular, not lower fat version? Why must I choose to eat either high fat or high carb? Why can't I find foods low in both categories?

Fat contributes a great deal to flavor. If fat is reduced, the flavor is usually replaced w/ carbs (sugar) to make the product pallatable.

The only "brand" I'm aware of that is low in both categories are South Beach products. You can also try snacking on fresh veggies and berries, which are low fat and low carb.

Avoiding the misconception here that all carbs are sugars and that all fats are proteins (way off), carbs are very essential for your brain and body. Fats are also necessary but the average person intakes so much more than needed. Fats are essentially needed to intake certain nutrients.

Don't eat things high in fat. Go for high-carbs. Not all carbs are sugars. Sugar is a simple carb. Carbs come in a variety, the three main being starch, sugar, and fiber. Fiber and starch are complex carbs, which (as mentioned before) are good for your brain and body. Sugars, yes carbs are necessary, but people tend to intake way more sugar than they need. Try to lay off of sugar.

Chances are the high-fat diet you may be implying is Atkins. the reason why some diets focus in intaking high amounts of fats is because the body burns carbs first before they burn fat. If there aren't any carbs to burn, then what's next? Fat. So if you eat fat, and you burn fat, you're burning more than you eat, which is good for losing weight, but to maintain such a diet risks high blood pressure and high cholesterol (peanuts aren't going to cut it). Besides, people who go on those diets misconceive the term "fat" and think of burgers, steak, and other fatty foods and believing that what is essentially BAD BAD BAD for you is good and pig out on well.. burgers, steak, etc.

Just eat what you like, limit your fats (especially saturated fats) and sugars, try to eat moderate amounts high in fiber and protein (protein is different from fats and carbs, it's its own category). If it's losing weight you're concentrated on, eat moderate amounts, do a total of 100 reps (lifting small weights, i.e. 5 pounds), and 100 crunches, either 50 each twice a day or 33 three times a day with one extra the last time around.

Don't be afraid to indulge every once in awhile (the satisfaction, even if only once in a long while, helps prevent losing control and bingeing).

If you want to be healthy, stick with low SATURATED fat items that are reasonably high in protein and with some carbohydrates. Carbs are not bad. It's too much of anything is not good. The body functions best on a balance of all nutrients.

Processed food distributors only make money if people buy their food. People mostly buy food that tastes good. For most people this means high fat or high sugar.

This means that most processed food manufacturers opt for either high sugar (carb) or high fat to sell their product.

Take a walk down the candy aisle and see how many candies claim low fat.

Because people who count carbs don't usually count fat grams. But if you cook a lot at home you can usually take care of the fat content at home, which is what I do.

Well, water is low in both. Seriously, carbohydrates are sugars. Fats are proteins. That pretty much covers the category of "food."
To be low in both is to be non-food. You might as well eat packets of sweetener or plastic drops.
