The best cooks use fresh herbs. Go out of the way to find parsley. It really makes all the difference in the dish. Also I'm Italian!!!!Flat parsley is the best.

Usually you use only 1/3 of dry herbs when subbing for fresh. So since it calls for 1/2 cup fresh (1/2 cup = 8 Tbsp), 1/3 of 8 Tbsp is about 2½ Tbsp. of dry parsely.

This is much easier on Tablespoons. 1 Tbsp = 3 tsp. So if a recipe calls for a Tbsp of fresh thyme, you can simply use 1 tsp. of dry thyme.

1/4 cup of dried parsley will kill ya! Go for the 2TB, it's mostly for color anyways, you don't want any more of that strong stuff in your dish. Good Luck!

1/4 cup will be ok. you can't use to much. Well, i guess you could. but alittle extra won't hurt. its not that potent of a spice.
