It's not worth it. In most upscale supermarkets you can find really good frozen ravioli. Seriously, fresh pasta is a big pain and ravioli especially since not only do you have to make the pasta but you have to fill all those little ravioli! If you insist on making it youself, you can take a shortcut and substitute wonton wrappers for the fresh pasta. Also, in some stores you can actually buy refrigerated fresh pasta.

Go to the grocery store. The recipe comes in a can marked Chef Boyardee Ravioli. Open the can and - VOILA - Ravioli!

The frozen ravioli are great. You can make a sauce with or without meat. Ravioli's in a can is gross to me.

Ingredients:
1 medium onion, chopped
1 pound ground beef
1 package large elbow macaroni, (cooked and drained)
1 pound cheddar cheese, grated
1 can cream of mushroom soup
1 large can tomato sauce
1/2 cup water


Directions:

Saute onion, Add ground beef and brown. In a baking dish, alternate layers of meat, macaroni, cheese, soup and tomato sauce. Add water. Top with Cheese. Bake at 450 degrees for 30 minutes, or until cheese is bubbly.

Easy Ravioli Bake:

This recipe pairs the convenience of store-bought pasta with a quick, easy homemade sauce. Chop tomatoes right in the can, snipping them with kitchen scissors. We enjoyed chicken ravioli in this dish, though any variety will work.

2 (9-ounce) packages refrigerated chicken ravioli (such as Monterey Pasta Company)
Cooking spray
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 teaspoon dried oregano
4 garlic cloves, minced
1/4 cup dry white wine
1/2 teaspoon dried basil
3/4 teaspoon salt
1/4 teaspoon crushed red pepper
1/8 teaspoon black pepper
4 (14.5-ounce) cans no salt-added whole tomatoes, undrained and chopped
6 tablespoons tomato paste
1/2 cup (2 ounces) shredded part-skim mozzarella cheese

Cook pasta according to package directions, omitting salt and fat. Drain well.

Preheat oven to 400°.

Heat a Dutch oven coated with cooking spray over medium-high heat. Add onion, bell pepper, oregano, and garlic; sauté 5 minutes or until vegetables are tender. Add wine and next 6 ingredients (wine through tomato paste), stirring well to combine; bring to a boil. Reduce heat, and simmer 20 minutes, stirring often. Remove from heat. Add pasta to tomato mixture, tossing well to combine. Spoon pasta mixture into an 8-inch square baking dish lightly coated with cooking spray, and sprinkle evenly with cheese. Bake at 400° for 30 minutes or until the cheese melts and begins to brown.

Yield: 4 servings

RAVIOLI WITH MARINARA SAUCE

Cheese filling or
Meat filling
Homemade pasta dough
All-purpose flour
Marinara Sauce
2 tbsp. salt
1 tbsp. salad oil
1/4 c. grated Parmesan cheese for topping

Prepare cheese or meat filling; set aside. Prepare homemade pasta dough. Cut pasta into 4 pieces. On floured surface, with floured rolling pin, roll 1 piece into a 15 x 6 inch rectangle; with sharp knife, cut rectangle crosswise into five 6 x 3 inch pieces. Spread rounded tablespoonfuls of either cheese or meat filling on 3 inch side of each piece of pasta to within 1/4 inch of edges. Fold dough over filling, bringing ends together; with fork dipped in flour, firmly press edges together. Place ravioli in single layer on floured, clean cloth towels. Repeat with remaining pasta and filling, making 20 ravioli in all. Let dry 30 minutes before cooking.
Prepare Marinara Sauce. In large kettle over high heat, heat to boiling 4 quarts water, salt and salad oil. Cook ravioli, a few at a time. 10 minutes or until tender but firm; drain well in colander. Arrange on heated platter. Spoon Marinara Sauce evenly over ravioli; sprinkle with Parmesan cheese. Makes 4 servings
