As most people have said it usually about 35-40 mph. It all boils down to conditions on the day: what the going is like, whether there is a head wind/tail wind/cross wind, etc.
Obviously the fastest horses run in sprint races (those over 5 or 6 furlongs) and National Hunt races tend to be run at nearer 30 mph - those jumps are scary enough without trying to jump them at full speed!

About 35 -40 mph on track surface
When you are on them riding it feels like you are going much faster than that.

It all depends. The fastest thoroughbreds can run about 60 feet per second at their fastest.
