First of all thank your Mom for working so hard and taking good care of you.
Suggest you guys plan a weeks worth of menus and then go shopping on the weekends. Maybe spend Sunday afternoon making meatloaf, lasagna, spaghetti sauce, meatballs, etc....and freeze them. Pull out what you'll have before you leave in the morning and cook it when you get home. Make a big tossed salad and keep it in a good covered bowl in the fridge.
Boneless, skinless chicken breast don't take but a few minutes to cook up in some olive oil. Also stir frys are easy, cut up steak, pork or chicken when you have time and when you get home throw it in a skillet put some type of sauce on it and put in a package of frozen veggies, serve over rice or pasta depending on the sauce you used.
Tonight I have a fully cooked boneless ham by Farmland, $6.00 at WalMart. I don't have time to put it in the oven and cook for 2 hours (casue I'm on here, right? LOL) so I sliced it up and I'm heating it in a skillet with a box of scalloped taters.
Also learn to love your crockpot, you can put stuff in it in the morning and dinner is done when you get home.

Invent a tradition: plan, shop and cook together. My mom and dad and I did this together for years starting when I was about 13. Some of the best times I spent with my parents as a teenager revolved around cooking together. It wasn't so much about what we were eating, just time spent in the same room chopping things up, setting the table, etc. I'd give anything to have that time back.
Anyway, cook together, and while you're doing all the boring prep work, you can talk, about what kind of day you've had that day or about bigger things too. You'll never regret making that bond with your mom, and she'll feel more appreciated too.

Getting home that late in the evening after a long day leaves little time to prepare a home cooked meal..Let alone the the energy to cook one up. However, it can be done..why not sit down together and plan a menu of meals that can be prepared ahead of time & frozen..like spaghetti sauce, lasagna or a stew to name just a few..the list is endless.. these main dishes can be taken out in the a.m. to thaw & prepared in relatively short time when you get home.Or put something like a roast in the crockpot before you leave for the day & when you come home POOF! It's ready to dish up. A green salad can be made in less time than it takes to open a ketchup packet from a fast food joint (well..you know what I mean) throw in a dinner roll & you have a delicious, healthy meal.You both could make out your grocery list of what you'll need, one of you or both do the shopping & of course a few hours in the kitchen to prepare your meals ahead of time could end up being a great experience for both of you. I think you'll find it less costly to eat this way & certainly better for you. It's a good feeling to come home after a long day & sit down together with family at the table while you enjoy the fruits of your labor! You will find thousands of recipes online or in cookbooks that were created to help people with busy lives like yours. And don't forget to set the table with the good dishes & cloth napkins..life is to short to save them just for holidays. Good luck to you!

Tell your mom that you'd rather have something made at home. Stock boxes of macaroni and cheese, instant mashed potatoes, and Ramen. It's sure to come in handy one day. However, one thing I'm sure you can make is soup in a crock pot. Just put some ingredients in it in the morning that you would want... then at the end of the day you have delicious soup that has had the flavors medling with each other all day! =)

Search online or get a book on crock pot recipes. They are very easy and can be prepared in the morning or night before. It cooks all day in the crock pot and when you get home there is a home cooked meal waiting for you.

There are a million crock pot recipes you can get online. You can get everything ready the night before then turn the pot on before you leave for work. When your mom gets home, dinner will be ready.

pick out any meat you like...then go to the gravy aisle and get a packet of seasoning mix to go with the meat. follow the directions on it and serve with mashed potatoes and a veggie of your choice. the perfect dinner!

try cooking it yourself. i was 10 when my mom started working , so i helped her cook or i made dinner. now i'm thritten and can cook really good!
