Different kinds of grapes are used for different wines; it depends on what you want. In France, the land is actually divided up by what kind of grapes you can grow on it in some places. Concorde grapes are good for red wine, but any red grape will do. Same for white; pretty much any white grape will do. Muscadine grapes of both colors are becoming popular in the US.

You can make red and rose wine from red grapes
You can make white wine from red grapes and from white grapes.
You cannot make red wine from white grapes.
That is because the red color comes from the skins of red grapes, but the juice of the grapes is clear.
The grapes used to make quality wine all come from various varieties of the same species of vine, namely vitis vinifera.
