Moms' good ole meatloaf
3lbs. of LEAN ground beef
1 medium onion chopped coarsely
2 eggs
3/4 of a pack of crackers crumbled or 1 1/2 cups of Quaker Oats
Ketchup
Worcestershire sauce
Bacon
Put ground beef in large mixing bowl and add onions and crumbled crackers and mix thoroughly by hand. Add eggs and mix in well. Add a couple squirts of ketchup and 3 or 4 dashes of Worcestershire sauce. Mix until thoroughly blended. Remove from bowl and place in foil lined baking dish. Form it into a long slightly flat loaf. Cover top of meatloaf with ketchup. Place 4 or 5 slices of bacon over the top of the ketchup. Bake until cooked through. If you are in a hurry form the mixture into large thick hamburger type patties for faster cooking, top them with ketchup and bacon, then bake until done. Cuts cooking time in half. To put a spin on things, cook the meatloaf on the top rack of your grill on foil. It tastes better than any meatloaf ever cooked in an oven.
P.S. You can substitute the crackers or oatmeal with the bread crumbs if you like, but I just think it tastes best with crackers or oatmeal.

I DO!
go to food network.com and search turkey meatloaf. click the one by ina garten. That's the best and easiest meatloaf recipe i know. Ground turkey is pretty darn expensive, so just substitute ground beef
based on personal experience, here are a few tips for when you make it-
- the recipe calls for you to pour ketchup on the top of the loaf. DONT DO THAT. if you do it comes out sort of sweet like barbecue sauce and tastes like garbage
- the recipe tells you to put a pan of hot water in the oven to keep the top from cracking. I'm not sure what you prefer, but if you don't do that, the meatloaf gets a thick brown crust on the outside and is really really tasty (to me at least)
- unless you're feeding a large crowd, cut the recipe in half. (five pounds of ground beef makes a huge meatloaf)
Enjoy!

you can throw the whole kitchen sink in and that would be fine, not two meatloaf recipes are the same, and they all will taste good..
my recipe
3 pounds of ground beef ..more or less for your family
one large onion, ,chopped to your liking
3 eggs, ,you don't really need them its up to you
handful of crackers or a handful of breadcrumbs either or
1 cup of ketchup
salt and pepper,... i also like any spice or seasoning i have doesn't matter
1 bell pepper.... cut up in small pieces but not necessary what ever you like
make into a loaf i don't like to put in a meatloaf pan because of the grease...i put aluminum foil on a cookie sheet or something along them lines.
then i put about a cup or so of ketchup on the top and spread out then i place raw bacon strips on top..
then cook til done..maybe one hour..

The ingredients you have sounds about right. You can make Meatloaf with almost anything or anyway you want. There are so many recipes for it. Cut up chunks of American cheese and stuff into the meatloaf. Put some salsa ontop or Ketshup on top if it also. What-ever you might have onhand will do also. Enjoy!

I make what I call my Taco Bell meatloaf :) We all love the bell. I add what you have there, then I add a good big dash of cumin, a bunch of chili powder and maybe a dash of cayenne, salt, pepper, and instead of crumbs I use crushed flake cereal. Mmmmm Then, I cook it about 1/2 way through, and pour some bbq sauce over the top!
You can also put a layer of meat, then a layer of sauce, then a layer of meat...or instead of sauce...cheese! mmmm Try bleu!

Just mix it all and bake! Sounds like you have everything you need! The one I use calls for instant oatmeal, chopped onions and green peppers and you prepare just like you would plain meatloaf...it's super yummy!
