For instance, one wishes to send greeting cards to the reverands of all churches in the community. What would be the correct way to start the card, assuming that there will be many different religions? (Dear Father?... Dear Reverand?...)

Refer to him or her as "most holy and revered servant of God." It may not be correct, but you can be certain they'll tell you what they wish to be called.

(By the way, note that I said him or her. Many churches are ordaining women now.)
