You can either try Indian chicken curry or Thai chicken curry, depending on what you like. Here's the Thai curry I make at home and serve with plain boiled rice
4 cup(s) shredded chicken
2 onions sliced
1 cup stir fry vegetabels (frozen)
2 tablespoon of sliced thai ginger
1 can coconut milk
2 tablespoon(s)red curry paste
2 kaffir lime leaves
a few basil leaves
4 tablespoon(s) oil
salt to taste
Heat the oil in a pan and briefly saute the onions. Add the red curry paste and saute for about 15 minutes.
Stir in the chicken and fry for 10 minutes more until brown. The add rest of the ingrediens except cocnut milk. Mix well. Add cocnut milk after 5 minutes. Cook on low level for about 15 minutes or till the chicken is tender.
Season with basil.
Serve hot with steamed rice or noodles

Ok, this might sound strange but it actually turned out really well.
Put a whole sleeve of Ritz Crackers into a ziplock bag and crush.
Pour into a bowl.
Add parsley, pepper, cayenne pepper and fresh chopped garlic.
Now add some grated Parmesan cheese and mix all together with a spoon.
Take whatever kind of chicken you want (breasts, legs, thighs, wings etc) and make sure they are ready to be used.
Crack one egg into a seperate bowl.
Take each piece of chicken and one by one dip into the egg then drop into the cracker mixture. Make sure you coat the chicken then place on a plate.
Preheat oven to 350 degrees.
Spray a cookie sheet with non-stick spray (the Pam olive oil if you have it) then place the pieces of chicken on it.
Set timer for 15 minutes and let it bake.
After 15 minutes, take it out and flip the chicken. Should be somewhat crispy on that side.
Put in for another 10 minutes and take them out. Check temp...170 degrees...if not then put back into oven for another 5-10 minutes.
Chicken should be crispy and golden brown-ish.
Serve with potatoes and a nice salad!

6 oz. tomato paste
3 T. olive oil
1/4 C. red wine vinegar
1/3 C. red wine
1/2 t. red pepper flakes
1/2 t. salt
1 t. dried basil
1/2 t. ground black pepper
4 skinless, boneless chicken breast halves
Wash the chicken and pat dry with paper towels. Combine the marinade ingredients and place the chicken and marinade in a zip-top plastic bag. Let sit at room temperature for 20 minutes, or in the refrigerator overnight.
Remove chicken from marinade and grill or broil chicken breasts 7 to 10 minutes per side, until done.

cut it up into chunks. sometimes I dip them in flour, then milk, then breadcrumbs, and sometimes I just cook em as is (although breaded is tenderer). In a nonstick pan (so you don't have to cook with oil), cook chicken till almost done. (If you toss a bit of olive oil in there, they'll also be more tender, and it's a healthier oil if you don't use a ton). Then, dump in a bunch of Sweet Chili Sauce - I use Cock Brand (seriously, that is what it is called) from the ethnic food aisle. Cook until chicken is done, and sauce is fully heated. Mmmmm... You could toss in some green onions or shredded carrots, too.
Sweet Chili Chicken. Gotta Love it!
Rice is a good side, because it tones down the slight spiciness.

Very very simple recipe
take your chicken, season it with some salt and pepper. Get some Italian salad dressing, shake it up and marinade the chicken for an hour or so in the salad dressing. Get a broiling pan, add some potatoes, some carrots and some onions. Put the marinated chicken in the pan, and bake in the oven until done. You might want to coat the pan with some butter, or line it with some aluminum foil.

Here's a great one....
Arrange 4-6 Chicken Breasts in a glass baking dish.
Place a slice of swiss cheese on top of each piece of chicken.
Next mix one can of Cream of Chicken soup with a Cup of white wine....in a seperate bowl.
Pour it over the top of the Chicken and Cheese.
To top it off...use stove top stuffing breadcrumbs and spread over the top.. ( can be any flavor )...will remain as a crunchy topping....
Bake in the oven until the chicken is white all the way through...
This makes pretty much a whole meal and is easy so you don't have to worry about sides... It you wanted, any green veggies would go good with it. Green Beans, Broccoli or Asparagus. My boyfriend loves this recipe.....If you want lower calories use Fat Free Cheese and Lower sodium or light soup.

Here's a quick and easy way and it makes it so moist!
Boneless chicken breasts or tenders
Mayo
Parmesan cheese
Coat the chicken pieces with mayo, then roll in Parmesan cheese to coat, put in a microwave safe dish. Sprinkle with salt/pepper then microwave til chicken is no longer pink.
The mayo adds no taste just seals the moisture in.
Add a nice side dish and you have a quick yummy meal!

Saute a Onion and Garlic in a pan with butter and olive oil, brown the chicken add rice and saute lightly. Put in chicken pieces and add chicken broth, keep adding broth until rice is light and fluffy.
Top with Romano Cheese or Parmesan Cheese and chopped parsley.
Or you can also
Put chicken in roasting pan coat with olive oil, garlic, salt, pepper, oregano, parsley, thyme, rosemary lemon juice
. Put in some potatoes cook until done and potatoes are nice and crispy.

I don't know if you like chicken salad, it's quick and easy to do!
Chicken Salad III
INGREDIENTS:
* 4 skinless, boneless chicken breast halves - cooked and diced
* 1 stalk celery, diced
* 4 green onions, chopped
* 1 Golden Delicious apple - peeled, cored and diced
* 1/3 cup golden raisins
* 1/3 cup seedless green grapes, halved
* 1/2 cup chopped toasted pecans
* 1/8 teaspoon ground black pepper
* 1/2 teaspoon curry powder
* 3/4 cup light mayonnaise
How to make:
1. In a large bowl combine the chicken, celery, onion, apple, raisins, grapes, pecans, pepper, curry powder and mayonnaise. Mix all together. Serve!

Buy some bbq sauce and pour the bottle over the chicken in a baking dish and bake it at 350 for an hour-mashed potatoes and blackeyed peas on the side-don't forget the bisquits.
