sour cream dip recipe
I N G R E D I E N T S
1 cup cream
1 1/2 cups pasteurized whole milk
1/2 cup buttermilk
I N S T R U C T I O N S
Mix all the ingredients in a bowl over warm water. Raise the temperature of the mixture to (68 degrees to 70 degrees F) and let it stand for 12 to 24 hours or until it is sufficiently sour and thick enough to cling firmly to a spoon. Keep in the refrigerator until you want to use it. For a richer heavier sour cream combine 2 cups of pasteurized heavy cream with 5 tablespoons of cultured buttermilk and incubate as before. For better texture refrigerate for 24 hours before serving.

Bacon-Cheese Dip:
1/2 cup sour cream
1 (4-ounce) package crumbled blue cheese
1 (3-ounce) package cream cheese, softened
1/8 teaspoon hot sauce
2 tablespoons diced onion
4 bacon slices, cooked and crumbled
Process first 5 ingredients in a blender or food processor until smooth, stopping to scrape down sides. Stir in half of bacon. Cover and chill 2 hours. Sprinkle with remaining bacon. Serve with crackers, raw vegetables, or potato chips.
Yield: Makes 1 1/2 cups

I have to agree with IvanD, you really cant make much with what you have. Sour Cream is a good start, if you have chives you can cut some up and throw them in there or run to the store and buy a bag of onion soup mix and mix with sour cream. Good luck.

Onion Dip from Scratch
(ALTON BROWN RECIPE)
2 tablespoons olive oil
1 1/2 cups diced onions
1/4 teaspoon kosher salt
1 1/2 cups sour cream
3/4 cup mayonnaise
1/4 teaspoon garlic powder
1/4 teaspoon ground white pepper
1/2 teaspoon kosher salt
In a saute pan over medium heat add oil, heat and add onions and salt. Cook the onions until they are caramelized, about 20 minutes. Remove from heat and set aside to cool. Mix the rest of the ingredients, and then add the cooled onions. Refrigerate and stir again before serving.

Take that sour cream and mix in a big spoonful of Italian Seasoning.
Sour cream is the base for lots of dips. You can use lemon juice, garlic, dried herbs, cheese, or diced clams or onions.
