Mmmmm, a buttery crumb topping:
The amount obviously depends on how many fillets and how big/thick they are, but basically your need:
Ritz crackers (or other buttery cracker)
melted butter
salt and pepper
lemon
Optional: can of well drained crap meat and/or finely chopped shrimp (canned baby shrimp work), if you want a seafood topping.
Crush the crumbs well in a ZipLoc w/ a rolling pin. Transfer to a glass bowl and stir in melted butter (like the consistency of graham cracker pie crust) add salt and pepper to taste. Stir in the seafood if you are using it.
Salt and pepper the haddock fillet and put in a greased dish. Top with the cracker crumb mixture and bake at 350 until done (again, this depends on how big/thick your filets are). Serve with lemon wedges or squeeze a bit of lemon juice on the top when you take them out of the oven.

An easy way is "En Papillote" ...
Put each fillet on a square of aluminum foil.
put salt and pepper, a little paprika, if you like, and a little lemon juice on each close the squares and place in the oven. Cook until tender at a medium heat, about 15 to 20 minutes. They cook in their own steam...really tender, simple and delicious!

I like to take some ( 3-4 lg table spoons) Mayonnaise, just enough milk to loosen the Mayo, a little lime juice, a tad of vinegar, salt, pepper and dill weed, mix it up good and pour it on. Yum

lemon pepper with garlic and onions, butter, sprinkle of rosemary. and squeeze some lemon on top cover then bake. yummy.
