lol, okay, so my grandma just bought a LOT of tomatoes and she dosent know what to do with them now. so im gonna be really nice and help her figure something out. problem is i cant cook and im not really sure waht tomatoes are used for. help? =) thanks!

1. Cut them in half. Scoop out the middle, leaving a thick layer of flesh around the hull. Fill with whatever you like, tuna salad, shrimp salad, etc.

2. Prepare like above only fill the cold halves with a hot casserole type of mixture, top with cheese or crumbs and then put under the broiler for a minute to brown or bubble up.

3. Cut them in very thick slices. Sprinkle one side of each slice with garlic butter, salt and pepper. Place them in a hot fry pan and sautee the slices, spice side down, for about two minutes. They should be brown or golden brown on the downside when they are done, but they should still be firm so don't overcook them. They can be eaten as a side dish this way, or, since you have a lot of them, cook a lot of them this way and freeze them for future use in tomato sauces.

Of all the tomato recipes the next one is the most versatile and the simplest:

4. Pico de gallo. Dice an equal amount of tomatoes, white onion & any colored bell pepper that you like. Chop up a little less than equal amount of Cilantro and mix it all together. Use it as a garnish on cooked meats, as a topping on salads, or add any number of different sauces to it. It's a great standard to have in your fridge all the time. Pre-chopped vegies so work for working people. I add celery to my pico de gallo. It does freeze if yoy freeze it in small, one cup sized amounts. Just don't add any spices to them until you are ready to use them, spices make this combo mushy real fast.

Great salad, and a nice change from potato salad.

Panzanella - bread and tomato salad
Cube some stale bread ( or toast fresh ) , cube some ripe tomatoes, chop whatever else in the veggie drawer looks good, like cucumber, bell pepper, celery, green onions. Mix it all together with a good splash of Italian dressing, or your own oil and vinegar. Refrigerate for an hour, then mix again.

You won't believe how good this is, even though I know you're thinking "soggy bread". Nope, it isn't like that. Let the tomatoes be most of the liquid, and if you have fresh herbs, throw 'em in there.

Stew them and can them. This way any time you have the need for stewed tomatoes in a recipe... TA-DA. Your Grandma might know how to can preserves, but if not check out the site below. It's not nearly as difficult as it seems, and you can have a bonding day with family and/or friends.

As I go to make Mom a tomato and lettuce with mayo sandwich, let me say, tomato soup, catsup, BLT (bacon lettuce tomato sandwich usually on toast) sauce for your spaghetti or your lasagna, used in chili,salsa, cut up in your salad, all by itself with a bit of salt.. Love tomatoes

Do not eat them off of pewter dinnerware.. it is where they got the reputation of being poison and if you could eat one and live you must be a witch... (chemical reaction of the acid from the tomato leeching out the lead in the pewter I think)

You can also stew them and can them for later use in sauces etc. from above.

Canned Tomatoes are really good. You can use them in alot of different recipes. Spaghetti Sauce, Chili, Ghoulosh etc. You can probably find out how to can veggies on google.

Toasted Tomato Sandwiches
Slice tomatoes and place on toast with mayonnaise!

GREEK SALAD
Kosher salt and freshly ground black pepper
4 tomatoes, seeded and cut into chunks
1 medium red onion, sliced thin
1 medium cucumber, sliced thin
1/2 pound feta cheese, crumbled
1/2 cup kalamata olives, pitted
1 head romaine lettuce, torn into bite size pieces
1/3 cup Italian dressing

Salt and pepper the tomatoes, onion and cucumber. In large bowl, toss tomatoes, onion, cucumber, cheese, olives and lettuce with dressing and serve.



Tomato Pie
4 tomatoes, peeled and sliced
10 fresh basil leaves, chopped
1/2 cup chopped green onion
1 (9-inch) prebaked deep dish pie shell
1 cup grated mozzarella
1 cup grated cheddar
1 cup mayonnaise
Salt and pepper

Preheat oven to 350 degrees F.

Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes. Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned. To serve, cut into slices and serve warm.


Tuna Salad Stuffed Tomatoes
1 can water-packed tuna, drained
1 tbsp. pickle relish
2 tbsp. mayonnaise
1/4 onion, minced
1 stalk celery, halved lengthwise and sliced
4 large tomatoes

Slice tops off of tomatoes, hollow out the insides and lightly salt, turn upside down on paper towels for 10 minutes to drain excess water. In bowl, combine tuna, relish onion, celery and mayonnaise. Stuff tomatoes with tuna salad and chill 1 hour before serving.


BAKED TOMATO SAUCE
20 Roma tomatoes, halved and seeded
1/4 cup olive oil
1/2 teaspoon kosher salt
1 teaspoon pepper
1 cup finely diced onion
2 teaspoons minced garlic
1 tablespoon finely chopped oregano leaves
1 tablespoon finely chopped thyme leaves
1 cup white wine

Preheat oven to 325 degrees F.
In 2 (13 by 9-inch) pans place tomato halves cut side up. Sprinkle with oil, salt and pepper, onion, garlic, and herbs. Bake tomatoes for 2 hours. Check the tomatoes after 1 hour and turn down the heat if they seem to be cooking too quickly. Then turn the oven to 400 degrees and bake another 30 minutes. Remove from the oven and process tomatoes through a food mill on medium dye setting over a small saucepan. Discard skins. Add white wine, bring to a boil, reduce heat to low and cook for 5 minutes.

Make pasta sauce (find recipes on line), store in small or medium containers in the freezer. Now and then, just boil some pasta, heat up the sauce, pour over the cooked pasta and sprinkle with chopped basil and salt/pepper.

Lucky you!!! Nothing in the world like home grown tomatoes. How about just slicing them and serve with fresh basil and fresh mozzarella cheese and a balsamic vinegar and olive oil!!! YUM!! I'm also sending you a pasta recipe which is to die for. Enjoy!!!

LINGUINE WITH TOMATOES AND BASIL

4 RIPE LARGE TOMATOES, CUT INTO ½” CUBES
1 LB. BERIE CHEESE, RIND REMOVED, TORN INTO IR Regular PIECES
1 CUP CLEANED FRESH BASIL LEAVES , CUT INTO STRIPES
3 GARLIC CLOVES , PEELED AND FINELY MINCED
1 CUP PLUS 1 T OLIVE OIL
2-½ t SALT
½ t FRESHLY GROUND BLACK PEPPER
1 ½ LBS. LINGUINE
FRESHLY GRATED IMPORTED Parmesan CHEESE

COMBINE TOMATOES, BRIE, BASIL, GARLIC, 1-CUP OLIVE OI, ½ t SALT, AND THE PEPPER IN A LARGE SERVING BOWL. PREPARE AT LEAST 2 HOURS BEFORE SERVING AND SET ASIDE, COVERED, AT ROOM TEMP.

BRING 6 QUARTS WATER TO A BOIL IN A LARGE POT. ADD 1 T OLIVE OIL AND REMAINING SALT. ADD THE LINGUINE AND BOIL UNTIL TENDER, 8 TO 10 MIN.

DRAIN PASTA AND IMMEDIATELY TOSS WITH THE TOMATO SAUCE. SERVE AT ONCE, PASSING THE PEPPEERMILL, AND GRATED PARMESAN CHEESE.

How about stuffed tomatoes, or chopped tomatoes in cottage cheese. or a tomatoe sandwich, or a BLT sandwich, or put slices on thick slices of garlic bread, top with cheese of choice, and broil quickly.

-make a yummy salad and toss in some sliced tomatoes.
-slice them and eat them plain.

-TOMATO, SAUSAGE AND SPAGHETTI Recipe

1 quart rich tomato sauce 1/2 pound spaghetti
1/2 cup hot water
1 pound sausage

If the sausages are in cases, nick them thoroughly; place in a frying
pan; cover with boiling water, simmer until done and well browned
(about an hour). Break the spaghetti in small pieces, and cook in
salted water until done; drain; rinse in cold water; drain again;
confine the sausage and spaghetti in the frying pan; add the soup
diluted with hot water, and let it stand until boiling-hot; serve at
once.

-stuff them with ham, cheese, mushrooms.
-toss them in omlets!!
