If you have some crackers, take them and crush them and mix them with some parsley flakes and garlic powder. If you don't have crackers, try using some bread crumbs instead. Dip the strips in a little bit of egg and coat with the crumb mixture. Put them in a pan and place little pats of butter all around the chicken. Bake at 350 for about 30 minutes. Easy and very tasty dinner!

This is Russian Chicken, super easy and yummy

Brown your chicken, place in 9x13 dish

Mix in a bowl:
1- 9 oz bottle of Russian dressing
1 small bottle of apricot jam
1 packet of Onion Soup mix
1/2 c. water
salt and pepper to taste

Pour over chicken, cover with tinfoil or lid and bake on 375 for about half an hour or until chicken is done. I also cook some instant rice and put chicken/sauce over the rice
It's yummy!

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts (chicken strips will work fine!)
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over rice, pasta or mashed potatoes.

Stir fry them. Cut the strips into cubes. Sautee them in butter with a little chopped bell pepper, celery, onion and any other coarsely chopped vegetables that you have in the fridge and think would compliment the dish. Serve over minute rice, pasta, or rolled up in tortillas, burrito style. For an extra flavor, use juice instead of water when you make the rice or pasta.

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

i love to sprinkle Lipton Vegtable Soup mix (in the packet) over chicken and serve it over rice. quick, easy, and delicious!! You can also try using Campbell's cream of chicken, or celery or mushroom soup over it with a little water or milk. I also serve this over rice. We eat alot of chicken, so I had to learn a few ways to make it that were good and easy is always nice.

If they are breaded breast strips, cut them into bite size pieces and put them into a burrito shell or pita pocket with lettuce, tomato, green pepper, shredded cheese, and top with vidalia onion salad dressing. If they are not breaded grill them in the broiler or George Forman, top with mazzorella and cooked bacon slices.
