I want it to be as creamy as it is at a restaurant. Any ideas?

You could probably put it in the food processor or mash it through a sieve.

Try buying it form a deli counter instead. See ifthere is a texture difference.. Otherwise use a hand blender of a food processor and sees if that helps.

Try cheese cloth, put it in, over a container. Will strain it, over night.

Use cottage cheese instead, its creamier and yummier, I use it instead of ricotta.
