What's the history or reason behind it? I see all these "Kansas City Style" barbeque sauces, and I wonder why Kansas City is a hotspot for barbeque.

I didn't say it was the best hotspot for barbeque. Why is it one of the few places known for barbeque.

The Carolina states are also good with barbeque pork apparently.

Kansas City Stockyards. One of the largest stockyards and close by were the Kansas City packing houses where the beeves were butchered. This gave rise to economical meat readily available, so local establishments used it to make their dishes. Competition between eating establishments caused them to fine tune their sauces to appeal to more people. Consequently, over the years Kansas City became a bar-b-que mecca.

Kansas City was where the railroad tracks crossed, so lots of cattle came through there on the way to market. That also meant there were a lot of railroad workers, many of them black, who already knew how to feed a crowd well on the cheaper parts of animals. BBQ is a great way to do that, and with so many cooks in town, there was plenty of pride and rivalry to be the best. There's a generally preferred style of sauce and dry rubs there, and different regions have their own styles, all of which are considered the True Best by their fans!
