The numbered dial is the thermostat, the higher the number, the colder the fridge/freezer will be. So obviously the lower the number the warmer it will be.
You should be able to set it to 0, which will switch off the compressor and stop the chilling/freezing process. Having done this, use a hair drier to melt away all the ice, (you Will get quite a lot of water out of it, so be prepared with some towels or something to soak up the water).
When it is properly defrosted, set the dial to about 4-5 and close the door.
It Will switch on again and the temperature inside will go down.

How old is this fridge that it needs defrosting. You have to empty out the whole fridge. ptu the contents in ice chests. open the frezer door and lewt it defrost. Keep towels on hand to clean up the mess. When finished plug it in and 12 hours plus befor eyou put the food back in.

the dial inside is to control the level of cold in the freezer/fridge. Generally the higher the number the colder and harder your frozen foods will be. The middle selection is a good starting placed , then adjust as necessary.

Turn the power off. I get my wifes hairdryer and gently prop it up and blow the warm air into the fridge. Place something at the bottom to catch the water. The dial is the degree of coldness. Once defrosted and cleaned turn to the coldest setting for about 4 hours, ok my pet.

Place empty washing up bowl under the ice section, put collection of bathtowels inside, open door and switch off - keep wringing out towels and emptying bucket.
