I don't know how many colleges have majors in Equinology, but there are a few colleges that have majors in Equine Management. I know some kids who are doing that. They study all abou the biology of horse -- like, their diseases and breeding, but they also study practical things about riding and taking care of horses, and stuff you would need to know if you were working at a horse farm as a manager or person in charge. Usually these courses involved learning to be a really good rider so you will be qualified to teach riding at a very expert level.
The kids I know who have done this have wound up with really great jobs in the horse industry, working for famous stables and taking care of beautiful horses for famous rich people!!!!

Although "equinology" seems logical. It is not correct, nor is a a word that you will find in English language dictionaries. Equine is an adjective that derives from the Latin word for horse, equus. The "ology" part of the word is from the Greek work for study, logos.

One does not properly mix the Latin and Greek roots to make terms for the study of something.

The proper word for the study of horses is hippology. This comes from the Greek word for horse, hippos, combined with "logos."

a person who studies horses is an hippologist and the adjective form of the word is hippological.

Equinology, I recently read this interesting study on how they manufacture artificial vaginas for horse breeders. They actually go through a lot of trouble to make it feel like the real thing and the water they put in them has to be an exact temperature, and it's different for every horse.
