Ham & Scalloped Potatoes (my sisters famous recipe ((ham&scallies)): Ham slices, Onion (chopped), Cheese (grated or chopped) *, 5-7 medium Potatoes (sliced) (russet or baking potatoes), Salt & Pepper, Flour

*You can use whatever cheese you have available, but it is usually either cheddar, Monterey jack, muenster, provolone, parmesan (just one, or a combination).

Spray the pan (13x9 baking dish) with cooking spray. Spread some onions on the bottom of the pan. Put a layer of ham over the onions. Next a layer of potatoes and then a layer of cheese. Sprinkle with a little bit of flour and salt and pepper. Repeat the layers beginning with ham. Pour some milk over the top (about 1-1 1/2 cups). Don't use too much milk or it will boil over into your stove. Bake 350 for 45min covered 10 min uncovered, let sit before serving. Just wing it with this one, you can't make a mistake!

PS: Omit the ham if you don't want it but it's better with it.

Barbecue Scalloped Potatoes:

3 large baking potatoes (about 2 1/2 pounds)
1 1/2 teaspoons salt, divided
1 (10-ounce) can cream of mushroom soup, undiluted
1 (5-ounce) can evaporated milk
1/4 cup spicy barbecue sauce
1/4 teaspoon onion salt
2 cups shredded sharp Cheddar cheese
1/8 teaspoon paprika

Cook potatoes with 1 teaspoon salt in boiling water to cover 30 to 40 minutes or just until tender. Let cool slightly; peel and slice. Set aside.

Stir together remaining 1/2 teaspoon salt, soup, and next 3 ingredients until blended.

Layer half each of potato slices, barbecue sauce mixture, and cheese in a lightly greased 2-quart round baking dish. Repeat layers; sprinkle top evenly with paprika.

Bake at 350° for 45 minutes or until golden.

Yield: Makes 6 servings

INGREDIENTS:
6 large peeled, cubed potatoes
1 (10.75 ounce) can condensed cream of mushroom soup
1 1/4 cups milk
1 onion, diced
1/2 teaspoon ground black pepper

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C). Grease a 2 quart casserole dish.
Layer potatoes and onions into the casserole dish. Combine soup, milk and pepper in a bowl, then pour soup mixture over the potatoes and onions. The soup mixture should almost cover the potatoes and onion, if it does not add extra milk.
Cover dish and bake in preheated 375 degrees F (190 degrees C) oven for 60 minutes or until the potatoes are cooked through. At 30 minutes, remove the casserole from the oven and stir once before returning the dish to the oven. Remove from oven and serve.

Layer potatoes (sliced thin), sliced onion, salt and pepper, a few dots of butter and a sprinkling of flour in a casserole dish. Layer until the casserole dish is 3/4 full, pour warm milk until it shows through the layers. Bake 350 degrees (covered) until the potatoes are tender and top is slightly browned and milk is absorbed into the potatoes.

try this for a change. peel and slice your potatoes alternately layer potatoes and sliced onion (salt and peper to taste) use one can mushroom soup (concentrated) alternating with the potato and onion. add alittle milk for moisture. cook in oven for 50min at 350 degrees 9you can use any kind of cream soup like asperagous , cauliflower cream chicken etc. enjoy

clean and slice potatoes dump two cans of cream of mushroom soup on top onions if you like them..and bake it at 350 until tender.

why make it when u could buy it.they sell boxed scalloped potatoes & its pretty good
