this is perfect and not plain old plain old but like a holiday in your mouth..
Chocolate Marshmallow
INGREDIENTS:
1 cup graham cracker crumbs
2 tablespoons sugar
1/4 cup melted butter
8 ounces marshmallows
1/2 cup milk
1/2 teaspoon vanilla
1 cup heavy cream, whipped
2 squares (1 ounce each) semisweet
chocolate, coarsely grated
PREPARATION:
Combine graham cracker crumbs, sugar, and butter; press into bottom and up sides of pie plate or refrigerator tray. Melt marshmallows in the milk over low heat, stirring frequently. Cool. Add vanilla; fold in cream and chocolate. Pour into crumb crust; chill thoroughly.

Go to allrecipes.com, find the recipe for cheesecake deluxe submitted by Muffy. Follow the recipe, except extend the baking time to about 3 1/2 hours, or until a toothpick comes out clean. Do the 400 degree bake for ten minutes first, as the recipe says to do. And you can add a few drops of vanilla to the recipe if you wish.
It is rich and creamy, and at least as good, if not better than Cheesecake Factory. I have made it many times, and I have the stuff in the frigerator for another. I substituted Neufachel cheese for a couple of the cream cheeses the last time, it is what I had in the house. I thought it gave a sharper taste to the cake, but I did save calories. I have made this many times, always to rave reviews, and it has turned out perfectly every time. It has 5 whole eggs, two egg yolks, and cream and flour and sugar and vanilla, i[f you want it], and 5 8oz packages of cream cheese..
Walmart has cheap springform pans, 3 sizes in a nest for way cheaper than one costs at the kitchen store. Just in case you do not have one!
I love allrecipes, I have signed up for the daily and weekly e-mails, and to use a recipe box, so I can store recipes I might like to use later. It is all free, and I have never had a problem with the site, or them. There is a service that costs money, you get additional recipes. But I do not need that. It took me just a couple minutes to sign up. I have got several recipes that I like and use repeatedly from there, Husband's Delight being another.

Well, I'm known as the cheesecake lady, so does that answer your question? lol

I make mean cheesecakes where I'm at. One of my favorites is a Strawberry Almond Chocolate Chip and people seem to love it as well.

Crust Ingredients:
1 cup graham crackers, finely crushed
1/4 cup sugar
5 tbsp. butter, melted

Mix crust ingredients and press 1/2 up on sides of springform pan and along bottom of pan. Bake at 350 for 10 minutes. Cool.

Filling Ingredients:
3 packages cream cheese, softened
3/4 cup sugar
1 can sweetened condensed milk
4 eggs
1/2 tsp. vanilla
1 tsp. almond extract
1/2 package of mini chocolate chips

Combine cream cheese, sugar, sweetened condensed milk and extracts in large bowl, mixing completely. Add eggs 1 at a time until all are incorporated. With a wooden spoon, mix in mini chocolate chips. Pour into cooled crust and bake at 350 for 50 minutes. When finished, take cheesecake out and let cool completely on counter.

Topping:
Fresh strawberries, sliced in half, to cover top of cheesecake
Strawberry glaze
Almond slices

Sprinkle almond slices on top of cheesecake. Arrange strawberry slices on top of cheesecake. Entire top of cheesecake should be covered with strawberries. Spoon the entire container of glaze over sliced strawberries and spread out. Refrigerate overnight.

Active time: 45 min Start to finish:10 hr


1 crumb-crust recipe, made with finely ground graham crackers
5 (8-oz) packages cream cheese, softened
1 3/4 cups sugar
3 tablespoons all-purpose flour
Finely grated zest of 1 orange
Finely grated zest of 1 lemon
5 large eggs
2 large egg yolks
1/2 teaspoon vanilla



Make crumb crust as directed in separate recipe. Preheat oven to 550°F.
Beat together cream cheese, sugar, flour, and zests with an electric mixer until smooth. Add eggs and yolks, 1 at a time, then vanilla, beating on low speed until each ingredient is incorporated and scraping down bowl between additions.

Put springform pan with crust in a shallow baking pan. Pour filling into crust (springform pan will be completely full) and bake in baking pan (to catch drips) in middle of oven 12 minutes, or until puffed. Reduce temperature to 200°F and continue baking until cake is mostly firm (center will still be slightly wobbly when pan is gently shaken), about 1 hour more.

Run a knife around top edge of cake to loosen and cool completely in springform pan on a rack. Chill cake, loosely covered, at least 6 hours. Remove side of pan and transfer cake to a plate. Bring to room temperature before serving.

Cooks' note:
mine lasted covered and chilled, 2 weeks.

Makes 8 to 10 servings.

4 packages cream cheese ( i like the off brand it seems to cream better then Philidelphia )
1 cup sugar
1 teaspoon vanilla

mix until a cream and pour into crust
bake at 450 for 15 min
chill over night

Chocolate-Coffee Cheesecake With Mocha Sauce:

3 cups crushed chocolate graham crackers (about 20 sheets)
1/2 cup butter or margarine, melted
PAM Original No-Stick Cooking Spray
4 (8-ounce) packages PHILADELPHIA Cream Cheese, softened
1 cup DOMINO Granulated Sugar
1/4 cup coffee liqueur
1 teaspoon instant coffee granules
1 teaspoon vanilla extract
4 large eggs
4 (1-ounce) bittersweet baking chocolate squares
Mocha Sauce

1. Stir together crushed graham crackers and butter; press mixture into bottom and up sides of a 9-inch springform pan coated with cooking spray.

2. Bake at 350° for 10 minutes. Cool crust in pan on a wire rack. Reduce oven temperature to 325°.

3. Beat cream cheese and 1 cup sugar at medium speed with an electric mixer until blended. Add coffee liqueur, coffee granules, and 1 teaspoon vanilla, beating at low speed until well blended. Add eggs, 1 at a time, beating just until yellow disappears after each addition.

4. Remove and reserve 1 cup cream cheese mixture. Pour remaining batter into prepared crust.

5. Microwave chocolate squares in a medium-size glass bowl 1 minute or until melted, stirring after 30 seconds; let cool slightly. Stir reserved 1 cup cream cheese mixture into melted chocolate, blending well. Spoon chocolate mixture in lines on top of batter in springform pan; gently swirl with a knife.

6. Bake at 325° for 1 hour or until almost set. Turn oven off. Let cheesecake stand in oven, with door closed, 30 minutes. Remove cheesecake from oven, and gently run a knife around outer edge of cheesecake to loosen from sides of pan. (Do not remove sides of pan.) Cool on a wire rack. Cover and chill at least 4 hours.

7. Remove sides of springform pan. Serve with Mocha Sauce.

Yield: Makes 8 servings

HERE IS MY RECIPE... NO BAKE CHEESECAKE
2 deep dish grahm cracker pie crust or make yur own
3 8 oz pkg cream cheese room temp
16 oz sour cream
16 oz tub cool whip
1 t vanilla
1/2 c brown sugar
cream cream cheese til smooth an creamy... add sour cream then sugar anvanilla... fold in cool whip... fill each pie crust put in fridge overnight serve in slices or add yur fav fruits..

the secret to cheese cake is not the pan, you don't have to have a spring form, its baking in a water bath.
