Yesterday, Giada DeLaurentis made Portobello Parmesan on Everyday Italian. It looked really good. I have been thinking about it all day. I am going to check foodnetwork.com for the recipe.

I found it.

I like taking portebellos and stuffing them with asiago, mozzarella, and parmagiano. Brush the tops with oilve oil and bake them for about five to ten minutes at 300. Then Slice them into four to six pieces and coat one side of the cheese with cumin seeds. I usually like to them simmer them for about 5 minutes more in some red wine. I recommend a bold full bodied wine otherwise the flavour will be lost in the mushrooms. Pretty much if you would cook meat in this wine it will work well with musrooms.
