Simply.....
God wants obedience by choice out of love,
not by force by commandment.
Although, since God created all things, and is therefore sovereign over His creation, He has every right to demand obedience;
but, since God is also loving, merciful, and long-suffering, not willing that any should perish, He gave them several opportunities to obey, by choice!

God is all knowing, but Adam and Eve are not. Adam and Eve would have never known not to eat of the tree unless God told them not to.
Are you trying to ask this question? If God is all knowing, why did he allow a circumstance for Adam and Eve to sin, knowing full well that eventually they would?

I tell my children not to do certain things, but I know that they're going to misbehave at some time or another. I'll tell my infant son not to touch something, even though I know he's not going to listen.
God told them not to eat the fruit (not an apple, according to the text) because it was best for them to leave it alone. He didn't make them disobey, and His knowledge of what would happen didn't make it a bad command.

That's the beauty of it... God knows exactly what is going to happen, and He has all the power in the world to change... yet, He gave us freewill. He said hear are my rules... you make the CHOICE whether or not to listen to them... after that, the outcome is up to you. If you choose to listen to God, then better things will come from it, but if you choose not to listen to God... well, you will find out about that later. The point is, God gave us a choice, freewill, options, and it is up to us to choose what is right...

It was a test of obedience to see how much they loved him after all he'd done for them. They failed & we are suffering the consequences now.
By the way, it might not have been an apple, the Bible just says "fruit"

Becuz he gave them a choice. They were humans, and they were tempted to eat the fruit from the tree. And than Eve convinced Adam to eat the fruit also. They knew it was wrong, but they were tempted and they were curious. God is good enough to give us that free will power. He gave us that free will so we can have choices to choose from. We can either choose to believe in him or choose not to. We sometimes choose the bad, but not becuz we are bad, becuz we are curious. There is bad becuz we learn from the bad.

God knows all -- watch out for temptation!
If a put a wallet on the chair next to a man sitting there will you take the wallet or will you ask the man if he dropped his wallet?
Temptation says....Here's an apple, want it bad enough, even though its wrong?
