If you grind them into a paste, and let them sit, eventually oil will seperate out and float on top. If you have ever bought tahini (ground up sesame seeds), you have to stir it really well initially to mix the oil back in. Same goes for natural peanut butter. I'm not sure if that's how it's done industrially, though.
