The little grey box is called your network interface box, if you unplug the line inside the box you will lose dial tone, however your billing will continue with the phone company. It's best that you have the phone company put your service on vacation tat will suspend the charges and temporarily disconnects the line

If all of your phone cabling terminate at a central location where your landline service enters your home, then that's the place where your VoIP adaptor would have to connect to. What's left to figure out is if that adaptor can produce enough voltage to drive the number of phone lines you want to support. And whether you can locate your VoIP adaptor there (usually in the basement), because most people locate their adaptor near their router (e.g., in the office).

if you want your service suspended then the phone company kills the service in the dial tone computers. and more importantly they stop your billing, so no just removing the jumper outside will not help you.

its all done on line computers at the phone co. if you mess with the box and wires, they will charge you for damages to there equipment. If you mess with the wires, a fault line will go off at the phone co. computer and they will come out and check it out...
