Why is it when I make a whole steamed artichoke at home, and im ready to eat the heart, I scrape out the choke (the hairy part) and throw it away, but when I eat things that use pre-prepared sliced (and sometimes marinated) artichoke hearts, those hairy things are not removed? Should I be removing them all the time? I've heard the hairy things are bad to eat...

I don't eat the hairy part, but that is me. I have never been served it either. If you like it eat it, if not then keep on doing what you are doing.

They're ok to eat if you want, especially if the artichokes are still fairly small.
